Salads are always a favorite for me and when it features avocado, that's a double whammy! Our whole family LOVES salad, even our little baby - we just chop it up really small! This Avocado Kale Salad was bursting with freshness and flavor! The plump cranberries, the crunchy little sunflower kernels, that incredibly tangy homemade Cilantro Lemon Dressing! It was delicious! My husband said it was the best salad he's ever had! This one was a total winner, and it was extremely easy to make!

8 cups Kale chopped
3 Green Onions thinly sliced
1 Avocado cubed
1 cup Carrots shredded
½ cup Dried Cranberries
¼ cup Cilantro minced
¼ cup Sunflower Kernels
Cilantro Lemon Dressing or dressing of your choice!

Instructions

Assemble the kale, carrots, green onion, and cilantro in a bowl.
Top with avocado, sunflower kernels, dried cranberry, and cilantro lemon dressing.
Toss the salad and serve immediately! Enjoy!
