For me, there's nothing like an egg oozing yolk all over a bed of hashbrowns and tender veggies! Total morning dream! This Bacon Breakfast Skillet was smoky, cheesy, yolky - it was everything I want in a breakfast! I love making different variations of breakfast skillets! I could never get tired of them. This one was a huge hit with the fam, and it was incredibly easy to make!
In a large skillet, cook bacon until crispy! Remove and set aside until ready to use. Add hashbrowns to grease, cover, and cook on medium heat for 5 minutes.
Add butter, salt, pepper, onion, green pepper, and garlic, stir everything until combined, patting down flat with your spatula. Cover and cook for 2 minutes more.
Uncover, sprinkle crumbled bacon over everything, stir and make 4 wells for the eggs.
Spray everything really well with cooking spray and crack eggs into the wells. Sprinkle the eggs with a touch of salt and pepper, turn heat to medium-low, cover, and cook 3 minutes.
Eggs are done when the whites have set and no longer jiggle.
Remove from heat, top with cheese, cover until cheese has melted.
Garnish Bacon Breakfast Skillet with cilantro and hot sauce, if desired!
