Beer Cheese
In the Midwest, we love our cheese! I whipped up this Beer Cheese for my family this weekend and it was amazing! We had it with some soft salty pretzels, but this dip could shine in so many other ways! You could put it on a charcuterie board, burger, or a sandwich! It was so simple to make, as only a few ingredients are needed! It felt super fitting since the NFL draft was this past weekend! Total game day vibes!
Ingredients
- 1 ½ cups Gruyere freshly shredded
- 1 ½ cups Colby Jack freshly shredded
- 1 cup beer any kind, I used Budweiser
- 4 oz cream cheese softened and cubed
- 1 tbsp Dijon mustard
- ½ tsp salt
Optional garnishes:
- green onion thinly sliced
- shredded cheese
Instructions
- In a small saucepan on medium, bring the beer to a simmer.
- Whisk in cream cheese, Dijon, and salt until melted and completely combined.
- Turn heat to low, and slowly add in the cheese while whisking continuously.
- Remove from heat and garnish with green onion and additional shredded cheese, if desired!

Notes
This beer cheese will keep for about 3-4 days in the refrigerator!
