I love pancakes, but I'm kind of choosy with them! I don't really eat plain pancakes; they have to be stuffed with something! Fruit, chocolate, pumpkin, anything! These Blackberry Pancakes were unique and delicious! I've actually never made a homemade pancake before, and I was surprised at how easy it was and how amazing they tasted! These were so fluffy and sweet, but then the blackberry comes in and offers a small sour note for the perfect flavor profile! These make an amazing weekend breakfast!
Wash blackberries thoroughly and set aside on a paper towel lined plate, pat dry.
In a large bowl, whisk together all dry ingredients
In a separate medium bowl, whisk together wet ingredients.
Add wet ingredients to the dry, and whisk until smooth
Gently stir in blackberries
In a large skillet, melt 1 tbsp butter on medium heat.
Pour 1/4 cup batter per pancake and cook 1-2 minutes per side, until golden brown, flipping when they start to bubble. Be sure to check them to avoid burning! Flipping only once keeps the pancakes fluffy!
Repeat steps with remaining butter and batter
Serve Blackberry Pancakes hot with butter, syrup, powdered sugar, additional berries - whatever you're feeling!
