Cilantro Lime Chicken
Cilantro and lime equal major flavor! These two ingredients are staples in our house and are on our grocery list every single time! This cilantro lime chicken is like fireworks in your mouth! It's super easy to make and can be enjoyed in a number of different ways! Just toss it into the oven for a yummy weeknight meal!
Ingredients
- 2 ½ lbs boneless skinless chicken breasts fat trimmed off and butterflied
- ¼ cup brown sugar
- 2 tbsp olive oil
- 2 tbsp chili powder
- 2 tsp paprika
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp salt divided
- ½ tsp pepper divided
For garnish:
- cilantro
- limes
Instructions
- Preheat oven to 425 ℉ and line a large baking sheet with foil
- Mix all spices together in a small bowl, besides the salt and pepper.
- Put butterflied chicken breasts onto baking sheet and drizzle with oil.
- Sprinkle 1/2 tsp of salt and 1/4 tsp of black pepper onto one side of the breast. Next, use a brush or your fingers to rub it all in there well.
- Flip and repeat with the other side of chicken breast. 1/2 tsp salt, 1/4 tsp black pepper, then rub it in!
- Rub spice mix all over the chicken breasts on both sides.
- Bake for 18 minutes, until chicken reaches 165 ℉
- Garnish with cilantro and lime juice
- Serve with rice, in tacos, nachos - whatever you like!
