With more and more sunny days in our future, it's time to start stacking my drink lineup to beat the heat! My husband and I love sippin' on fruity cocktails while we hang on the deck or grill some steaks. It just seems like a whole vibe to us. This Dragon Fruit Rum Cooler was so unique and went down incredibly easy! The orange and lime in there complemented that sweet agave syrup and those subtle notes of dragon fruit and rum! It felt like the type of drink you'd be having poolside or on some tropical getaway. It was so easy to make it, and as always, this recipe makes two drinks. Ya need a drinking buddy!
Wash the dragon fruit, then cut the ends off of it.
Cut it into quarters, reserving two thin slices for garnish.
Pull the peeling back and the fruit will come right out.
Dice it up, then add it to a mason jar or cocktail shaker.
I don't have a cocktail shaker, so I used the mason jar method, and it worked great!
Using a masher or muddler, mash up the dragon fruit until juicy and mushy.
To make the dragon fruit rum cooler:
Wash the orange and limes, then juice them into a small bowl.
Next, add the citrus juices, rum, agave syrup, and salt to the mason jar or cocktail shaker with the dragon fruit.
Fill it up about halfway with ice, then shake for 10-15 seconds.
Fill two glasses up with ice and strain the mixture between them.
Since I don't have a cocktail shaker, I used a fine mesh sieve and strained it into a bowl, using a wooden spoon to push down and get all of that flavorful liquid out!
To serve:
Serve dragon fruit rum cooler cocktails garnished with fresh mint leaves and a dragon fruit wheel on each glass. Enjoy!
