I'm always looking for fun ways to use up leftovers! I had a ton of leftover pulled pork from the Carnitas recipe that I had made. Though, you could make these Fried Pulled Pork Tacos with really any type of leftover meat! The best part is it takes no time at all!
Heat 1 tbsp olive oil in a skillet on medium. Lay tortillas out and add a bit of pulled pork and shredded cheddar on top, fold over and cook for about 2 minutes.
Flip and cook until golden brown on both sides. Repeat until all tacos are fried, adding oil as needed
Serve with side of salsa and lime wedges, if desired. Garnish with cilantro and onion.
