Alfredo is my ultimate guilty pleasure! Everyone knows that feeling, when you've just eaten a bunch of rich, yummy food and you want to beeline to your sweatpants drawer. This garlic sausage alfredo is a bit healthier than the classic alfredo, but it still tastes amazing! And it's ready in about 30 minutes!
8ozfettuccinecooked to package instructions - reserving 1 cup of pasta water
3garlic clovesminced
½cupfresh Parmesangrated
4ozcream cheeseroom temperature, cut into cubes
2tbspbutter
2tbspfresh parsleydivided
1tspsalt
¼tspblack pepper
Instructions
Cook pasta to package instructions, reserving one cup of pasta water. Drain and set aside until ready to use.
In a large, deep skillet, melt butter on medium heat. Add sausage to pan and cook until browned nicely. I like to use a tong for this, flipping each one after about 2 minutes - to brown them all on both sides.
Add garlic to pan and cook for one minute, until fragrant. Now add half and half, turn heat to medium-low, and bring sauce to a simmer. Next add cream cheese, and mix it all together well, allowing it to melt.
Stir in salt, pepper, 1 tbs parsley, and parmesan. Mix well until completely melted, cook for about 4 minutes.
Fold in cooked pasta and remove from heat. The pasta will thicken as it stands for a minute or two. If you want to thin out the cream sauce, slowly add in your reserved pasta water to get to your desired consistency. I like my alfredo really thick, so I just added a splash!
Serve Garlic Sausage Alfredo hot with remaining parsley and additional parmesan as a garnish. You can also serve with a breadstick, side salad, whatever you like!
