This sandwich really is the Ultimate Breakfast Sandwich! We love making this on the weekends! It's super easy to make, it's HUGE, and it tastes amazing! It's also loaded with protein to keep you fueled all throughout the morning! This is a quick breakfast recipe that totally pops with flavor!
Fry bacon in a skillet on medium, about 5 minutes. Set aside on a paper towel lined plate until ready to use.
In the same pan with the bacon grease, fry eggs and onion, adding a bit of salt and pepper to each.
Put your toast down in the toaster and remove fried onion from the pan, adding to plate with bacon. When eggs are done and fried on both sides, about 3 minutes, add cheese to the tops. Remove from heat and allow that cheese to melt.
When toast is done, spread mayo on all slices.
On one half of sandwich, line 1 1/2 bacon slices. Next, add a fried egg on top of the bacon, then some fried onion. Shake a bit of everything bagel seasoning on top. Add tomato and fan the avocado over it.
