Baked Chicken Spaghetti
A creamy, cheesy pasta bake is always a winner at our house! This Baked Chicken Spaghetti was so flavorful and hearty! The bacon brings on a smoky flavor, while the cream cheese brings a richness, and those veggies, and spices - I mean, it was a total comfort dish! This was super easy to make and it made a TON! This is the perfect fall/winter dinner! And the best part is, then you've got lunch for the week!

- 1 lb Spaghetti
- ½ lb Bacon
- 3 Garlic Cloves minced
- 1 Green Pepper diced
- 1 Yellow Onion diced
- 2 ½ cups Cooked Chicken - rotisserie or try my Oven Baked Chicken Breasts chopped or shredded
- 1 ½ cups Shredded Colby Jack divided
- 1 - 14.5 oz Can Diced Tomatoes undrained
- 8 oz Cream Cheese softened, cubed
- ¼ cup Sour Cream
- 1 tsp Salt
- 1 tsp Italian Seasoning
- ½ tsp Black Pepper
- ¼ tsp Garlic Powder
- ¼ tsp Onion Powder
- ¼ tsp Cayenne
For serving:
- Parsley minced
Instructions
To prep the ingredients:
- Boil some salted water and preheat the oven to 375 ℉.
- Lightly grease a 9x13 baking pan.
- Next, break the spaghetti in half and cook until al dente per the package instructions. Drain and set aside.
- Make your chicken breast if you're not using a rotisserie, then shred or chop into bite sized pieces.
- Now let's cook the bacon until crispy, then crumble it, and set aside until ready to use.
To make the filling:
- In the same pan with the bacon grease, cook onion and pepper for 2-3 minutes on medium heat, stirring occasionally.
- Add the garlic and cook one minute, until fragrant.
- Turn heat to low and add the tomato and cream cheese, stirring and allowing everything to melt.
To make the baked chicken spaghetti:
- Move mixture to a large mixing bowl, then add the chicken, sour cream, half of the bacon, half of the cheese, and the seasonings. Stir to combine.
- Carefully fold in the pasta, stir to combine, then pour into prepared baking dish.
- Top with the rest of the cheese and bake until golden and bubbly, about 30 minutes.
- Garnish with remaining bacon and parsley, if desired. Enjoy!
