Oven Baked Chicken Breasts

The options are unlimited when you have some chicken breasts on hand! A lot of recipes will call for a cup or two of cooked chicken, and these oven baked chicken breasts are a super easy way to do it! If you don’t need the chicken right away, simply toss it into the fridge and it’ll be ready to incorporate into your next dish featuring chicken! What a breeze! I’ve baked some breasts like this when my chicken either needed to be cooked or frozen, but I wasn’t sure what I wanted to do with it yet. Toss this cooked chicken into salads, pastas, wraps – whatever!

Why cook chicken breast this way?

There’s a ton of ways to make chicken breast, but when using the chicken for another recipe or even just eating them with some mashed potatoes and veg, I like to bake them! It’s just so hands off, easy, and brushing them with the oil and all those spices leaves them juicy every time! This method has been pretty fool proof for me! There’s nothing worse than some dried out chicken.

What ingredients do I need for this recipe?

For the oven baked chicken breasts:

Chicken Breasts
Olive Oil
Onion Powder
Salt
Black Pepper
Italian Seasoning
Paprika

For serving:

Parsley

How do I make it?

To prep and bake the chicken breasts:

Preheat oven to 425 F. Cut the fat off the breasts, then pound them down to about 1 1/2 inches thick. You could also butterfly them instead. Next, add the olive oil to a 9-inch baking pan, coating the bottom.

Add all seasonings for the breasts to a small dish, then whisk to combine. Place the chicken in the pan, then season on both sides, using a silicone brush to rub the spices and oil in.

Bake until chicken has reached an internal temperature of 165 F and is golden brown in color.

To serve:

Wait a few minutes before slicing and serving. This keeps them juicy! Garnish with fresh parsley, if desired. Enjoy!

Tips:

  • It’s important to pound these down or slice them in half otherwise they may take much longer to cook through.
  • The higher cooking temp on these leaves a nice crust, sort of resembling a rotisserie chicken. This is such a money saver!

Ingredients

  • 1 lb. Chicken Breast pounded down to 1 1/2 inches thick or butterflied
  • 1 tbsp Olive Oil
  • ½ tsp Onion Powder
  • ½ tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Italian Seasoning
  • ½ tsp Paprika

For serving:

  • Parsley minced

To serve:

  • Let rest for 5-10 minutes before slicing and serving.
  • Garnish with fresh parsley, if desired. Enjoy!
