Chicken Pepper Sheet Pan
Who doesn't love a colorful plate of veggies!? This chicken broccoli pepper sheet pan is super quick for busy weekdays and it's bursting with flavor! Those garlic flavors, the lemon juice, and the ZEST! Just adds such a brightness to the dish! I love using tinfoil for sheet pans too, literally just bake it and then toss the foil! No cleanup, nothing! Makes life a breeze sometimes when things get super hectic!
Ingredients
- 1 lb boneless skinless chicken breast cut into 1 inch pieces
- 2 cups broccoli florets
- 1 yellow onion sliced
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 3 tbsp olive oil
- Juice and zest from one lemon
- 2 tsp italian seasoning
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp onion powder
- ½ tsp black pepper
Optional garnishes:
- parsley
- parmesan
Instructions
- Preheat oven to 400 ℉. Line a large baking sheet with tinfoil for easy cleanup, spray well with cooking spray
- Carefully mix all ingredients together in a large bowl with your hands.
- Bake for 17 minutes, flipping halfway through.
- Broil on high for 2 additional minutes
- Remove and top Chicken Pepper Sheet Pan with freshly grated parmesan and fresh parsley, if desired.
