This Sausage and Veggie Frittata was super easy to make, bursting with flavor and nutrition, and the best part about it was - I got to make everything in one of my favorite pans, my Xtrema Signature Skillet! From sautéing the vegetables to popping it in the oven, it's all done right in one! It doesn't get much better than that! Because like who wants to do a sink full of dishes on a Sunday morning? Nobody! This Frittata has it all! It was garlicky, crunchy, fluffy, delicious!
In a mixing bowl, whisk egg, cream, basil, 1/2 tsp salt, cayenne, and 1/2 cup shredded colby jack until combined.
To make the sausage and veggie frittata:
Next, in Xtrema skillet or other oven safe pan, brown breakfast sausage until no longer pink, about 5-7 minutes, stirring occasionally. Drain and set aside until ready to use.
In the same pan, without wiping out those flavorful sausage bits, melt butter on medium heat.
Add all veggies but the spinach and garlic to the pan. Add the rest of the salt and the pepper and cook for 3 minutes, stirring occasionally.
Next, add the garlic and spinach and cook until spinach has wilted and garlic is fragrant, about 2 minutes.
Remove from heat and pour the egg mixture and sausage into the pan.
Give everything a good stir, and top with the rest of the colby jack and the feta.
Bake for 20-25 minutes, until eggs have set and no longer jiggle. When the top starts to puff up a little bit, that means it's ready!
Broil on high for 1-2 minutes for a nice golden-brown top!
To serve:
Wait a few minutes, then cut into pizza-like slices and serve! Enjoy!
