Sausage and Veggie Frittata

For me, a hearty breakfast with eggs, veggies, and sausage is EVERYTHING! This Sausage and Veggie Frittata was super easy to make, bursting with flavor and nutrition, and the best part about it was – I got to make everything in one of my favorite pans, my Xtrema Signature Skillet! This pan made making this dish so easy! From sautéing the vegetables to popping it in the oven, it’s all done right in one! It doesn’t get much better than that! Because like who wants to do a sink full of dishes on a Sunday morning? Nobody! This Frittata has it all! It was garlicky, crunchy, fluffy, delicious!

Where did the frittata come from?

Frittatas originated in Italy, and they date all the way back to ancient Roman times! They first came about around the 16th-17th century, but the actual frittata dish wasn’t really recognized as being separate from omelets until the mid-20th century! The term “frittata” comes from the Italian word “friggere” which means “to fry.” Pretty interesting stuff!

So, why Xtrema? Why not just use a cast iron skillet?

Cast iron skillets are lovely, and there is certainly a use for them – but I like to use my Xtrema pan because it’s lightweight and dishwasher safe, which for me as a mom, is super helpful! What ingredients do I need to make this?

Egg
Heavy Cream
Mushrooms
Spinach
Orange Bell Pepper
Green Bell Pepper
Pork Breakfast Sausage
Onion
Garlic
Feta
Shredded Colby Jack
Butter
Salt

Cayenne
Black Pepper

How do I make it?

To prep the ingredients:

To start, preheat oven to 375 F and wash and prep your veggies! Dice the pepper and onion. Slice the mushrooms. Mince the garlic and roughly chop the spinach.

In a mixing bowl, whisk egg, cream, some of the seasonings, and some of the cheese until combined.

To make the sausage and veggie frittata:

In Xtrema skillet or other oven safe pan, brown breakfast sausage until no longer pink. Drain and set aside until ready to use.

Next, in that same pan with all of the flavorful bits left behind, melt butter on medium heat. Add all veggies but the spinach and garlic to the pan. Add the rest of the salt and the pepper and cook for a few minutes, stirring occasionally.

Now add the garlic and spinach and cook until spinach has wilted and garlic is fragrant.

Remove from heat and pour the egg mixture and sausage into the pan. Give everything a good stir, top with cheese, then bake!

Broil for a minute or two to get a nice golden-brown crust on the top! Frittata is done when the eggs are set and no longer jiggle. It’ll start to puff up a little bit, that means it’s perfect!

To serve:

Wait a few minutes, cut into pizza-like slices and serve! Enjoy!

Tips:

  • You could add whatever veggies or meat you want to this! This would be yummy with some tomato added, some bacon, whatever you want!
  • You can also swap out the cheese for whatever you have on hand! Though, the feta does complement the egg very well!
  • This wasn’t too spicy at all! There was a little bit of heat, but this recipe was completely family friendly!
  • This recipe is perfect for meal prepping! Once the frittata has cooled, you can cut and freeze it in an airtight container for up to 3 months!

Ingredients
  

  • 6 Eggs
  • 4 Garlic Cloves minced
  • 1 Orange Bell Pepper diced
  • 1 Green Bell Pepper diced
  • 1 Yellow Onion diced
  • 12 oz Pork Breakfast Sausage
  • 8 oz White Mushrooms sliced
  • 8 oz Spinach roughly chopped
  • 1 cup Shredded Colby Jack divided
  • ¼ cup Feta
  • 3 tbsp Butter
  • 1 tbsp Heavy Cream
  • 1 tsp Salt divided
  • ½ tsp Dried Basil
  • ¼ tsp Cayenne
  • ¼ tsp Black Pepper

Instructions
 

To prep:

  • Preheat oven to 375 ℉.
  • In a mixing bowl, whisk egg, cream, basil, 1/2 tsp salt, cayenne, and 1/2 cup shredded colby jack until combined.

To make the sausage and veggie frittata:

  • Next, in Xtrema skillet or other oven safe pan, brown breakfast sausage until no longer pink, about 5-7 minutes, stirring occasionally. Drain and set aside until ready to use.
  • In the same pan, without wiping out those flavorful sausage bits, melt butter on medium heat.
  • Add all veggies but the spinach and garlic to the pan. Add the rest of the salt and the pepper and cook for 3 minutes, stirring occasionally.
  • Next, add the garlic and spinach and cook until spinach has wilted and garlic is fragrant, about 2 minutes.
  • Remove from heat and pour the egg mixture and sausage into the pan.
  • Give everything a good stir, and top with the rest of the colby jack and the feta.
  • Bake for 20-25 minutes, until eggs have set and no longer jiggle. When the top starts to puff up a little bit, that means it's ready!
  • Broil on high for 1-2 minutes for a nice golden-brown top!

To serve:

  • Wait a few minutes, then cut into pizza-like slices and serve! Enjoy!
