2cupswhite riceinstant - cooked to package instructions
1tbsplime juice
1tbspcilantrominced
½tspsalt
¼tsppepper

Instructions
Peel shrimp, gently pinching tails off. Set aside on paper towel lined plate until ready to use.
On medium-high heat, melt butter in a large skillet
Add shrimp in a single layer and cook for two minutes, carefully flip shrimp with a tong and cook for 1 minute more. The high heat gives you a very pretty crust and color on the shrimp.
Turn heat to medium-low, add garlic. Cook for one minute, until fragrant.
Add black beans, corn, all spices, lime juice, zest, and cilantro to the pan. Stir well.
While that stays warm in the skillet, let's prepare the rice.
Take cooked white rice and add salt, pepper, lime juice, and cilantro. Stir well and scoop into bowls.
Scoop shrimp mixture into the bowls, on top the bed of rice
Serve with grape tomato, additional cilantro, and green onion! Enjoy!
