Shrimp Bowl with Cilantro Lime Rice

This shrimp bowl is so flavorful and so simple to whip up for the family! You can really taste all the components, and they complement each other so well! I love the zesty rice and the spicy shrimp – then all those fresh garnishes on top! Delicious!

Why are bowls so great!?
The concept of adding a bunch of ingredients to a bowl became popular around 2010 with health-conscious trends like poke bowls and grain bowls! The idea behind the bowl is that they’re quick and easy, typically healthy, and visually appealing!
Did you know?
When shrimp are raw, they are gray in color due to the fact that the pigment “astaxanthin” is locked into the proteins inside. Once cooked, the heat allows the pigment to release, which is why they turn pink! Super cool, right?!
What ingredients do I need for the shrimp bowl?
Raw Shrimp
Frozen Corn
Black Beans
Butter
Cilantro
Garlic
Lime
Chili Powder
Salt
Oregano
Cumin
Paprika
Black Pepper
Cayenne
What ingredients do I need for the rice?
White Rice
Salt
Black Pepper
Lime Juice
Cilantro
For garnish:
Green Onion
Grape Tomato
Cilantro
How do I make it?
Peel shrimp and gently pinch tails off. Set aside on paper towel lined plate until ready to use. Cook rice to package instructions and set aside until ready to use.
On medium-high heat, melt butter in a large skillet. Add shrimp in a single layer and cook for a few minutes, carefully flip with a tong and cook for a minute more. The high heat gives a very pretty crust and color on the shrimp! Turn heat to medium-low, add garlic. Cook for a minute, until fragrant. Next, add the black beans, corn, all of the spices, lime juice, zest, and cilantro. Stir well to combine.
While that stays warm in your skillet, let’s prepare the rice. Take cooked white rice and add salt, pepper, lime juice, and cilantro. Stir well to combine and scoop into bowls. Add the shrimp mixture on top and serve with grape tomato, additional cilantro, and green onion for garnish. Enjoy!
Tips:
- This will keep for 2-3 days if refrigerated in an airtight container
- If you want this to be spicier, consider adding some crushed red pepper flakes or more cayenne pepper!
- This bowl would also be amazing with some of my Cilantro Lime Crema drizzled over the top!

Ingredients
For the shrimp bowl:
- 1 lb raw shrimp deveined, peeled, tails removed
- 3 garlic cloves minced
- Juice and zest from one lime
- 1 can black beans drained and rinsed
- 1 ยฝ cups frozen corn thawed
- 3 tbsp butter
- 2 tbsp cilantro
- 2 tsp chili powder
- 1 tsp salt
- 1 tsp oregano
- 1 tsp cumin
- ยฝ tsp paprika
- ยผ tsp black pepper
- Pinch of cayenne
For the rice:
- 2 cups white rice instant – cooked to package instructions
- 1 tbsp lime juice
- 1 tbsp cilantro minced
- ยฝ tsp salt
- ยผ tsp pepper
Optional garnishes:
- green onion
- grape tomatoes
- cilantro
Instructions

- Add black beans, corn, all spices, lime juice, zest, and cilantro to the pan. Stir well.
- While that stays warm in the skillet, let's prepare the rice.
- Take cooked white rice and add salt, pepper, lime juice, and cilantro. Stir well and scoop into bowls.
- Scoop shrimp mixture into the bowls, on top the bed of rice
- Serve with grape tomato, additional cilantro, and green onion! Enjoy!
