Quesadillas are a fav at our house because they're easily customizable, delicious, and super easy to make! These Shrimp Quesadillas were the perfect way to celebrate Cinco De Mayo this year! The ooey gooey center, the spice and flavor profile of those perfectly cooked shrimp, the sweet pepper, oh and let's not forget about that INCREDIBLE homemade Cilantro Lime Crema to dunk it in! Such a winner!

Instructions
On a paper towel lined plate, pat shrimp dry.
In a large skillet on medium heat, melt butter.
Add onion and pepper, cook for a minute. Stir in garlic, cook for one minute more, until fragrant.
Place shrimp in the pan and all seasonings. Stir occasionally and cook 2-3 minutes, until shrimp are pink.
Remove contents of the pan and place into a large bowl. Cover with foil to keep warm until ready to use.
Wipe out skillet and place tortilla in the pan on medium heat.
Add some cheese, cilantro, and using a slotted spoon add some of the shrimp mixture to one side of the tortilla. Add a bit more cheese, fold the tortilla over, and cook about 3 minutes per side, until golden brown.
Repeat with remaining ingredients. Be mindful of your heat, you may need to turn it down to low, so you don't burn your tortillas!
Serve Shrimp Quesadillas with Cilantro Lime Crema dipping sauce and additional cilantro for garnish, if desired!
