Shrimp Quesadillas

Quesadillas are a fav at our house because they’re easily customizable, delicious, and super easy to make! These Shrimp Quesadillas were the perfect way to celebrate Cinco De Mayo this year! The ooey gooey center, the spice and flavor profile of those perfectly cooked shrimp, the sweet pepper, oh and let’s not forget about that INCREDIBLE homemade Cilantro Lime Crema to dunk it in! Such a winner!

The word quesadilla comes from the Spanish word “queso,” and it literally means “cheesy little thing!” Isn’t that funny?! Quesadillas originated in Mexico and the traditional versions were actually made with corn tortillas, not flour. The classic OG quesadillas also only featured cheese – veggies and meats didn’t come until later! Pretty neat stuff!
What ingredients do I need to make these?
Shrimp
Tortillas
Yellow Bell Pepper
Red Onion
Garlic
Shredded Cheese
Cilantro
Butter
Onion Powder
Garlic Powder
Salt
Cumin
Oregano
Paprika
Black Pepper
Cilantro Lime Crema for dipping – store-bought or try my homemade recipe!
How do I make it?
On a paper towel lined plate, pat shrimp dry. In a large skillet on medium heat, melt butter.
Add onion and pepper, cook for a minute. Stir in garlic, cook until fragrant. Place shrimp in the pan and all seasonings. Stir occasionally and cook a few minutes, until shrimp are pink. Remove contents of the pan and place into a large bowl. Cover with foil to keep warm until ready to use.
Wipe out skillet and place tortilla in the pan on medium heat. Add some cheese, cilantro, and using a slotted spoon add some of the shrimp mixture to one side of the tortilla. Add a bit more cheese, fold the tortilla over, and cook a few minutes per side, until golden brown. Repeat with remaining ingredients. Be mindful of your heat, you may need to turn it down to low, so you don’t burn your tortillas!
Serve Shrimp Quesadillas with Cilantro Lime Crema dipping sauce and additional cilantro for garnish, if desired! Enjoy!

Shrimp Quesadillas
Ingredients
- 1 lb shrimp peeled and deveined
- 5 taco sized flour tortillas
- 3 garlic cloves minced
- 2 ยฝ cups shredded Mexican cheese
- ยฝ cup yellow pepper diced
- ยฝ cup red onion diced
- 2 tbsp cilantro minced
- 2 tbsp butter
- ยฝ tsp onion powder
- ยฝ tsp garlic powder
- ยฝ tsp salt
- ยฝ tsp cumin
- ยผ tsp oregano
- ยผ tsp paprika
- ยผ tsp black pepper

Instructions

- Remove contents of the pan and place into a large bowl. Cover with foil to keep warm until ready to use.
