Street Corn Casserole
Street corn is one of my favorites! It's messy and delicious! This Street Corn Casserole gives the street corn vibe, but it's super easy to make and it's family friendly! Just toss everything into the oven and bake it! Felt just like walking around at the Farmer's Market, but in the comfort of my own home, and can be enjoyed any time of the year! The whole family devoured it!
Ingredients
- 24 oz frozen corn thawed
- 1 Roma tomato deseeded and diced
- 8 oz queso fresco divided
- ½ cup mayo
- ½ cup sour cream
- 2 tbsp cilantro divided
- 1 ½ tsp chili powder divided
- ½ tsp salt
- ½ tsp garlic powder
- ¼ tsp black pepper
- Pinch of Cayenne
- Cooking Spray
Optional garnishes:
- cilantro
- queso fresco
- chili powder
Instructions
- Preheat oven to 350 ℉ and grease a baking dish with cooking spray
- In a large bowl, mix all ingredients together besides 1 tbsp cilantro, 2 oz queso fresco, and 1/2 tsp chili powder
- Empty corn mixture into the prepared baking dish, spread out evenly with the back of a spoon, and bake for 30 minutes
- Serve Street Corn Casserole hot, and garnish with remaining cilantro, queso fresco, and chili powder
