Street corn is one of my favorites! It’s messy and delicious! This Street Corn Casserole gives the street corn vibe, but it’s super easy to make and it’s family friendly! Just toss everything into the oven and bake it! It’s the perfect easy weeknight dinner! Felt just like walking around at the Farmer’s Market, but in the comfort of my own home, and can be enjoyed any time of the year. The whole family devoured it!

What’s the backstory on street corn?

Corn has been a staple in Mexico for over 9,000 years! Early preparations included roasting corn over open flames and in the 16th century, the Spanish introduced using cream, cheese, and butter on the corn! By the 19th and 20th century, street venders were selling street corn out of their carts in urban areas – which has shaped the street corn we know and love today!

Why make this in a casserole dish and not just make street corn?

Street corn is amazing! But sometimes you just want something easy! This recipe doesn’t get easier! You can also use fresh corn when it’s in season! Casseroles are great because they’re family friendly and take very minimal effort and cleanup! Think of it as a deconstructed street corn! This is a recipe the whole family will love, and it’s fitting year-round!

What do I need to make Street Corn Casserole?

Corn
Tomato
Mayo
Sour Cream
Queso Fresco
Chili Powder
Salt
Garlic Powder
Black Pepper
Cilantro
Cayenne
Cooking Spray

Optional garnishes:

Cilantro
Queso Fresco
Chili Powder

How do I make it?

Preheat oven to 350 F and grease a glass baking dish with cooking spray. In a large bowl, mix all ingredients together besides some cilantro, some of the queso fresco, and some chili powder.

Empty corn mixture into the prepared baking dish, spread out evenly with the back of a spoon and bake! Serve Street Corn Casserole hot, and garnish with remaining cilantro, queso fresco, and chili powder. Enjoy!

Ingredients
  

  • 24 oz frozen corn thawed
  • 1 Roma tomato deseeded and diced
  • 8 oz queso fresco divided
  • ½ cup mayo
  • ½ cup sour cream
  • 2 tbsp cilantro divided
  • 1 ½ tsp chili powder divided
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • Pinch of Cayenne
  • Cooking Spray

Optional garnishes:

  • cilantro
  • queso fresco
  • chili powder

Instructions
 

  • Preheat oven to 350 ℉ and grease a baking dish with cooking spray
  • In a large bowl, mix all ingredients together besides 1 tbsp cilantro, 2 oz queso fresco, and 1/2 tsp chili powder
  • Empty corn mixture into the prepared baking dish, spread out evenly with the back of a spoon, and bake for 30 minutes
  • Serve Street Corn Casserole hot, and garnish with remaining cilantro, queso fresco, and chili powder
