Pesto just reminds me of summer! Fresh basil! Oh, the smell. Delicious! This Shrimp Pesto Pasta was bursting with the flavors of garlic, pesto, tomato, and those amazing succulent shrimp!? Yum! This dish was simple to toss together on a busy weekday, and it was a major hit! Aside from cooking the noodles separate it was pretty much a one-pot, which I love!
Pat shrimp really dry and set aside on a paper towel lined plate
In a large deep skillet, melt butter on medium heat and cook shrimp 2-3 minutes, stirring occasionally, until pink.
With a slotted spoon, remove shrimp to a bowl and cover with foil to keep warm.
In the same skillet, cook onion on medium heat for 2 minutes, then add garlic and cook for one minute, until fragrant.
Stir in white wine vinegar, pesto, diced tomato, 1/2 cup parmesan cheese, and spices.
Turn heat to medium-low and top dish with the mozzarella rounds. Cover and simmer 3 minutes.
Remove from heat and stir in remaining parmesan, cooked pasta, shrimp, and basil. Stir and swirl in that melted mozzarella cheese as you mix everything together!
Garnish Shrimp Pesto Pasta with Balsamic Glaze if desired and serve!
