Shrimp Pesto Pasta

Pesto just reminds me of summer! Fresh basil! Oh, the smell. Delicious! This Shrimp Pesto Pasta was bursting with the flavors of garlic, pesto, tomato, and those amazing succulent shrimp!? Yum! This dish was simple to toss together on a busy weekday, and it was a major hit! Aside from cooking the noodles separate it was pretty much a one-pot, which I love!

Pesto was born in Italy! The classic version is made with basil, garlic, pine nuts, parmesan cheese, and olive oil! It’s then crushed up into a beautiful green paste! The word pesto actually comes from the Italian word “pestare” which means “to pound” or “to crush!”
What ingredients do I need to make this?
Shrimp
Diced Tomato
Fettuccine
White Wine Vinegar
Parmesan Cheese
Pesto
Onion
Mozzarella
Garlic
Butter
Basil
Salt
Italian Seasoning
Black Pepper
Optional garnishes:

How do I make it?
To get started on this recipe, first you’ll want to carefully peel the shrimp and remove their tails. Then pat them dry and set aside on a paper towel lined plate until ready to use. Boil pasta to package instructions, drain, and set aside.
In a large skillet, melt butter on medium heat. Cook shrimp a few minutes until pink, stirring occasionally. With a slotted spoon, remove shrimp to a bowl and cover with foil to keep warm until ready to use.
In the same skillet, cook onion on medium heat for a few minutes until translucent, then add garlic and cook until fragrant. Next, stir in the white wine vinegar, pesto, diced tomato, some parmesan cheese, and all of the spices. Turn heat to medium-low and top dish with the mozzarella rounds. Cover and simmer a few minutes, until mozzarella has melted.
Now remove from heat and stir in remaining parmesan, cooked pasta, shrimp, and basil. Stir and swirl in that melted mozzarella cheese! Garnish Shrimp Pesto Pasta with Balsamic Glaze if desired and serve! Enjoy!

Ingredients
- 1 lb shrimp deveined, peeled, tails removed
- 1 – 15 oz can diced tomato
- 3 garlic cloves minced
- ยฝ yellow onion diced
- 8 oz fettuccine cooked per package instructions
- 1 cup white wine vinegar
- ยพ cup parmesan cheese hand shredded, divided
- ยฝ cup pesto
- 4 oz fresh mozzarella sliced into rounds
- 2 tbsp butter
- 2 tbsp fresh basil chopped
- ยฝ tsp salt
- ยฝ tsp Italian seasoning
- ยผ tsp black pepper
Optional garnishes:
- balsamic glaze, store-bought or check out my recipe
Instructions
- Pat shrimp really dry and set aside on a paper towel lined plate
- In a large deep skillet, melt butter on medium heat and cook shrimp 2-3 minutes, stirring occasionally, until pink.
- With a slotted spoon, remove shrimp to a bowl and cover with foil to keep warm.
- In the same skillet, cook onion on medium heat for 2 minutes, then add garlic and cook for one minute, until fragrant.
- Stir in white wine vinegar, pesto, diced tomato, 1/2 cup parmesan cheese, and spices.
- Turn heat to medium-low and top dish with the mozzarella rounds. Cover and simmer 3 minutes.
- Remove from heat and stir in remaining parmesan, cooked pasta, shrimp, and basil. Stir and swirl in that melted mozzarella cheese as you mix everything together!
- Garnish Shrimp Pesto Pasta with Balsamic Glaze if desired and serve!
