Salmon and Broccoli Foil Pack

Summer calls for grillin’ and chillin’ on the patio! This Salmon and Broccoli Foil Pack was the perfect easy weekday dinner! The juicy lemony flavor that comes through on the broccoli, and that delicious garlicky salmon?! It was scrumptious! This was fun to make and after it was done, we all got to sit out on the deck together and enjoy each other’s company! This dish was also nice and light – perfect for a scorchin’ day!

Why are foil packs so popular?
Foil packs are awesome because they create this little pouch for your food to safely sit on the grill, while keeping all of that lovely flavor trapped inside! This can help to protect that delicate salmon flesh! Using a foil pack also allows you to sit back and relax a bit, because it reduces the risk of burning or overcooking your food! It’s basically like a little steam oven! How neat is that?!
What ingredients do I need to make this?
Salmon
Broccoli Crowns
Lemon
Garlic
Olive Oil
Dill
Parsley
Lemon Zest
Salt
Black Pepper
How do I make it?
To prep the salmon and broccoli foil pack:
Grab a large piece of aluminum foil and stretch it out on your baking sheet. Make sure the piece will be long enough to wrap around the salmon and broccoli! You can always grab another piece if you need to.
Drizzle some olive oil onto the foil and lay out your salmon fillets. You can leave the skin on or off, it doesn’t really matter since it won’t get crispy in the foil pack due to the moisture. It’s easier to take it off after cooking though! I put my salmon skin side down for this.
Let it sit at room temperature while you prep all the other ingredients.

Wash your broccoli and cut it into bite-sized pieces. Mince the garlic. Zest and slice the lemons. Sprinkle the broccoli around the salmon and drizzle the rest of the oil over everything.

Next, sprinkle the seasonings over everything and toss the broccoli around with your hands until adequately covered. Sprinkle the garlic, dill, and parsley everywhere, reserving some herbs for garnish. Dust everything with lemon zest and top with lemon.

To grill it:
Wrap the foil around the salmon and broccoli and create a little pouch by pinching it together on both sides. Preheat the grill to medium-high for 5 minutes.

Next, carefully lower the foil pack onto the grill and cook for several minutes depending on the thickness of your salmon. I had two fillets that were about 1 inch thick. If they are thicker than this, expect a longer grill time. Make sure to peek at your foil pack before the end of the cook time to avoid overcooking.
Remove from the grill and garnish with remaining herbs! Enjoy!

Tips:
- Letting the salmon sit out at room temperature before cooking it helps to ensure even cooking. Don’t let it sit out too long though! 15 minutes is all it needs!
- If you don’t want broccoli with this dish, consider swapping it out for some fresh asparagus!

- 3 tbsp Olive oil divided

Instructions

- Remove from the grill and garnish with remaining herbs! Enjoy!
