    With summer comes fresh tomatoes growing in abundance! And when you live in a climate like mine – it could go from scorching heat, to constant rain, to 70 degree days, to nights as low as 49 F in July! What a ride. You never know if you’ll have an ice cream week or a soup week. Seriously…that is the Midwest! This Tomato Basil Sausage Soup was such a brilliant way to use up some of those fresh tomatoes from the garden. It really doesn’t get fresher than this! The big juicy chunks of Italian sausage, with that fresh basil also plucked from the garden. Have this with some crispy bread or some buttery crackers! I mean it was SO wholesome.

    Summer makes me want to grill! I want all of the in-season fruits and vegetables, and I want to showcase them in all the creative ways I can! It’s the best. With peaches in season right now, I really wanted to come up with something sweet and savory using this juicy, delicious fruit. These Grilled Chicken Street Tacos with Chili Peaches hit every texture and flavor. You’ve got that grill and char on the chicken breast and peaches, you’ve got that fresh and vibrant cilantro lime crema, the fresh cilantro and onion, the lime juice. It was amazing. I felt like I was bopping around the farmer’s market, right in the comfort of my backyard! Total food truck vibes.

    One Pot Creamy Lemon Orzo and Beef

    Holy moly, it’s been so HOT outside. We are loving the sunshine, the pool, and living off cold sandwiches during the day. Come supper time, we are completely famished and ready to get cozy in the air conditioning while enjoying a bowl of something soulful! This One Pot Creamy Lemon Orzo and Beef was extremely easy and totally popping off with flavor. It was so unexpected too. It was tangy and cooling, a little earthy, slightly spicy, and so vibrant! The tender red onions, the fresh dill and arugula, the mushrooms and juicy beef, the lemon punch?! It was just ridiculous. The beef almost gave off hamburger vibes with that little char on there. Light and summery but still comforting!

    Tropical Chicken Thigh Bowls

    It’s already July and I can’t believe it! I just want summer to last forever. In the Midwest, it really seems to fly by. Before we know it, the snow is here. I’m too busy soaking it all in (literally), and I’m just trying to get back outside! These Tropical Chicken Thigh Bowls were jam packed with sweet and savory flavor. The chicken was so juicy and golden, the coconut ginger sauce was creamy, sweet, and a little spicy. Then you’ve got that delicious cucumber mango topping which freshens everything up and gives off even more tropical vibes. Served over rice, this recipe was easy and delicious. A total winner with the family, done in just 35 minutes and…it tastes like summer.

    Life is hectic lately! My boys are growing, time is flying, and I blink my eyes and it’s already a new day. Wild. One pot recipes are perfect for busy days because seriously, the last thing I need to do is MORE DISHES. Absolutely not. This Sausage and Tomato Rice Skillet is a hearty one pot recipe that, though simple, totally blew our minds. The bay leaf adds so much flavor! The Italian sausage was juicy and nutty, the rice was perfectly cooked, while the sauce was rich and savory. It was just awesome! Everything came together in about half an hour and there was plenty to go around. This recipe is great for summer too, when you just don’t want to sit in the kitchen forever!

    Sometimes you just need a really good recipe that you can make in the crockpot! Literally just set it and forget about it. These Crockpot Philly Cheesesteak Sandwiches were super easy to make and even easier to eat! These totally rocked. Those tender bell peppers, the juicy ground beef, the melty cheese, and that toasted bun? My god. It was like a total flavor explosion! Plus, getting them melty and toasty with the broiler was a total hack! My boys devoured these lickety-split and there was a ton to go around.

    If you have kids, then you know – they are always getting sick! One snotty nose at the park and it’s game over for your family. Having a cold in the summer is the biggest bummer. Literally. Perfect for a busy weeknight, super flavorful, and super affordable – I mean what’s not to love? This recipe was a winner!

    It’s been so nice and sunny lately, I just want to live in my swimsuit! Load the cooler up with snacks, sandwiches, and cold drinks – and we’re off!     When it’s beautiful outside, the last thing I want to do is sit in the kitchen for hours and cook. Turning the oven on is a no go, and sometimes, I don’t even feel like sitting in front of the hot grill. I want easy, yummy, and quick – that way I can get back to splashing in the pool with my boys!     Ravioli with Brown Butter Mushrooms and Sage

    This Ravioli with Brown Butter Mushrooms and Sage was ridiculously easy but somehow felt elevated into something straight from a restaurant. Those sautéed mushrooms, the nutty brown butter, and the crispy sage came together and really brought those packaged raviolis to life! This was ready in under half an hour, making it perfect for a busy weeknight. Plus, I LOVE mushrooms. This was really impressive!

    Steak Bibimbap

    Bibimbap is a vibrant and popular Korean dish that features veggies both raw and sautéed, a protein, and a sunny side up egg – served over a bed of rice! I saw it on a cooking show years ago and have wanted to try it ever since! This Steak Bibimbap was super flavorful, unique, and easy to make! There was so much going on, so many different textures and temperatures, which made it really fun to dissect! The crunchy carrot and cucumber, that flavorful marinated steak, the crispy rice, the lemon gochujang glaze?! It was awesome.
