You’ve got that grill and char on the chicken breast and peaches, you’ve got that fresh and vibrant cilantro lime crema, the fresh cilantro and onion, the lime juice. It was amazing. I felt like I was bopping around the farmer’s market, right in the comfort of my backyard! Total food truck vibes.

    Tropical Chicken Thigh Bowls

    It’s already July and I can’t believe it! I just want summer to last forever. In the Midwest, it really seems to fly by. Before we know it, the snow is here. I’m too busy soaking it all in (literally), and I’m just trying to get back outside! These Tropical Chicken Thigh Bowls were jam packed with sweet and savory flavor. The chicken was so juicy and golden, the coconut ginger sauce was creamy, sweet, and a little spicy. Then you’ve got that delicious cucumber mango topping which freshens everything up and gives off even more tropical vibes. Served over rice, this recipe was easy and delicious. A total winner with the family, done in just 35 minutes and…it tastes like summer.

These Blueberry and Goat Cheese Grilled Chicken Flatbreads were packed with sweet and savory flavors. These were so tasty and light – the perfect thing for enjoying out on the patio! The chicken breast features a balsamic marinade, then they were grilled to juicy perfection. The blueberries were slightly roasted, just enough to burst and become juicy and jammy. The goat cheese crumbles, fresh basil, the gooey mozzarella, and that balsamic glaze drizzled over top brought everything together so beautifully. This could be a quick lunch, main, app, or snack! It’s pretty healthy too!

    It’s been so nice and sunny lately, I just want to live in my swimsuit! Load the cooler up with snacks, sandwiches, and cold drinks – and we’re off!     Bacon Jam Chicken Caesar Salad Wraps

    This time of year, all I want to eat are fresh veggies, salads, wraps, and sandwiches! They just really hit the spot for me on a hot sunny day! These Bacon Jam Chicken Caesar Salad Wraps were crunchy, creamy, and filled with flavor. The chicken was warm and juicy; the bacon jam was crunchy and sweet! Then you have that smoky chilled Caesar dressing, which was super easy to make and added SO much flavor! Everything was all wrapped into a tortilla with some toasted corn and fresh lettuce, then toasted until golden. These were ridiculously good and everything was made in just one pot!

    Smoked Beer Can Chicken

    This Smoked Beer Can Chicken was rubbed with a variety of spices like paprika, garlic powder, chili powder, and herbs. It was smoked for several hours, then finished off at a higher temp for the most delicious, crispy skin. I lathered a garlic butter all over this and we dug right in. This was so tasty, and I love how versatile it is too. Have it with mashed potatoes, air fried potatoes, a yummy side salad. This whole smoky chicken gives all the summer BBQ vibes.

    I wanted to do something new with chicken thighs because I feel like, they’re really underrated! These Hot Honey Fried Chicken Thighs gave all the fried chicken vibes while being sweet and kinda spicy all at the same time! These were easy to make and even easier to eat! My kids loved them – they were still family friendly! Just grab your favorite dipping sauce and dig in! The messiest meals are usually the yummiest!

    This California Chicken Burger was so fresh, unique, and juicy! The burger patty had this lemony essence; and that avocado sauce was creamy and vibrant! The fresh veggies piled on there was the perfect balance between hot, cold, crunch, and that warm buttery brioche bun just really took it all over the top. This was so yummy!
