This would drop jaws at a potluck this summer.
This time of the year, I am chomping at the bit for summer! I want all the chilled, bright, vibrant things! This Avocado Shrimp Salad was full of flavor, and it totally felt like sunshine! I scored a cute little spaghetti squash from my local Aldi and thought I’d put a springy twist on it! This Lemon Garlic Air Fryer Spaghetti Squash was light, bright, garlicky, and a little spicy! This would also totally rock into the late summer and fall as well because you don’t have to turn your oven on to make it! My mind was completely blown by the flavor here and it literally took HALF the time it would take to bake!

When we go out to get Chinese food, I gotta say – my FAVORITE part is the crab rangoons. I mean, they are THE BEST! Since we like cooking Chinese food at home pretty often, I wanted to try my own version of my favorite thing! These Homemade Crab Rangoons are filled with lump crab meat, onion, cream cheese, and max flavor!

I love salads like, 24/7 and especially when they’re unique and intriguing! This Arugula Beet Salad had so much flavor and texture going on! It was sweet, savory, that little vinegar punch in there, some tangy, creamy goat cheese – those sweet bursts of orange!? I mean – it was delicious! So complex and different than just any old salad!
These Greek Stuffed Tomatoes are loaded up with feta, artichokes, spices, and herbs – featuring a tasty pesto spin! These were simple to make and went beautifully with our dinner, but they could easily be a showstopping appetizer or snack!
