Creamy Cucumber Salad

Cucumber salad is a crowd favorite! This creamy cucumber salad bursts with dill, garlic, and tang! I used a crinkle cutter for the cucumbers to bring a little extra flair! I also love the tomatoes in it, for more of a summery vibe! It’s hard to resist! Between my husband, myself, and my toddler, we could eat this in one sitting! It’s the perfect side dish for a potluck or summer BBQ! Plus, if you grow cucumbers, then you know they often times grow in abundance! This is the perfect way to put your extra cucumbers to use! This is a dish that everyone loves and your whole family will be begging you to make for the next event!

Why is this salad perfect for a potluck or BBQ?
This dish is bright, fresh, and creamy which is the perfect contrast with some smoky pulled pork and juicy burgers! It’s also perfect for the summer when these fresh veggies are more readily available! This salad makes a great side dish or appetizer for any gathering though, year-round! We like to make this for home, just to enjoy whenever! It’s delicious!

Cucumbers are made up of 95% water! They’re basically crunchy little hydration sticks! How neat, right?! And the phrase “cool as a cucumber” is no joke! The inside of cucumbers literally stays 20% cooler than the outside due to a botanical phenomenon called “evaporative cooling!”
What ingredients do I need to make this?
For the dressing:
Mayo
White Vinegar
Garlic
Dill
Salt
Red Pepper Flacked
Black Pepper
For the creamy cucumber salad:
Mini Cucumbers
Grape Tomatoes
Red Onion
How do I make it?
To prep the veggies:
To get started on this recipe, first wash all of the veggies! Next, partially peel the mini cucumbers and thinly slice them. Thinly slice the grape tomatoes and finely dice the red onion. Mince the garlic.

To make the dressing:
Next, add the mayo, vinegar, garlic, and all of the spices to a bowl and whisk to combine.

To make the creamy cucumber salad:
Stir in the veggies, cover, and refrigerate for a while to marry those flavors together.

To serve:
Serve chilled creamy cucumber salad as a BBQ side, bring it to a potluck, eat it by itself as a snack, whatever you want! Enjoy!

Tips:
- This will keep in the refrigerator for 3-5 days if stored in an airtight container.
- For a lighter version, add a little bit less mayo and a touch more vinegar!
- If you don’t have red onion, you can always use yellow, white, or green onion. It will still be really yummy!
- I only had dried dill on hand, but if you have fresh – that’s even better!

Creamy Cucumber Salad
Ingredients
For the dressing:
- 2 garlic cloves minced
- ยฝ cup mayo
- 1 ยฝ tbsp white vinegar
- ยฝ tbsp dried dill
- 1 tsp salt
- ยผ tsp black pepper
- ยผ tsp red pepper flakes
For the creamy cucumber salad:
- 1 lb mini cucumbers partially peeled, thinly sliced
- ยฝ small red onion finely diced
- ยฝ cup grape tomatoes thinly sliced
Instructions
To make the dressing:
- Add mayo, vinegar, garlic, and spices to a bowl and whisk to combine.
To make the creamy cucumber salad:
- Stir in the veggies.
- Cover and chill for 30 minutes for the BEST flavor.
To serve:
- Serve creamy cucumber salad as a BBQ side, bring it to a party, or eat it as a snack! Enjoy.
