Avocado Kale Salad

Salads are always a favorite for me and when it features avocado, that’s a double whammy! Our whole family LOVES salad, even our little baby – we just chop it up really small! This Avocado Kale Salad was bursting with freshness and flavor! The plump cranberries, the crunchy little sunflower kernels, that incredibly tangy homemade Cilantro Lemon Dressing! It was delicious! My husband said it was the best salad he’s ever had! This one was a total winner, and it was extremely easy to make!

Why Kale is Underrated!
Kale is extremely healthy for you! It belongs to the Brassica family – which is a group of vegetables that also includes brussels sprouts, collard greens, and cabbage! Pretty neat, huh?! In fact, kale is one of the most nutritious foods around! It offers a ton of antioxidants, vitamins, and minerals! There are two antioxidants in particular, quercetin and kaempferol, which help fight inflammation and oxidative stress! It’s good for your heart, your eyes, your bones, your gut – I mean, what’s NOT to love about this leafy green?! Kale deserves more love!
So what’s all in this Avocado Kale Salad?
Kale
Avocado
Green Onion
Dried Cranberries
Cilantro
Carrots
Sunflower Kernels
Cilantro Lemon Dressing or dressing of your choice!
Equipment Needed:
How do I make it?
Wash and chop up all your veggies! Chop up the kale, shred the carrots and thinly slice the green onion!


Mince the cilantro, and at the very end cut your avocado into cubes.
Assemble the kale, carrots, cilantro, and green onion in a bowl. Top with the cranberries, sunflower kernels, and avocado.

Drizzle on the cilantro lemon dressing, toss, and serve immediately! Enjoy!

Tips for this salad:
- Feel free to sub out whatever ingredients you’re not feeling! Use pumpkin seeds instead of the sunflower kernels, use a store-bought dressing if you don’t have time to make the fresh Cilantro Lemon Dressing (though, for the full experience, it’s highly recommended to keep the integrity of this salad!)
- Make this salad ahead of time but add the dressing, avocado, and sunflower kernels just before serving!

Avocado Kale Salad
Ingredients
- 8 cups Kale chopped
- 3 Green Onions thinly sliced
- 1 Avocado cubed
- 1 cup Carrots shredded
- ½ cup Dried Cranberries
- ¼ cup Cilantro minced
- ¼ cup Sunflower Kernels
- Cilantro Lemon Dressing or dressing of your choice!
Instructions
- Assemble the kale, carrots, green onion, and cilantro in a bowl.
- Top with avocado, sunflower kernels, dried cranberry, and cilantro lemon dressing.
- Toss the salad and serve immediately! Enjoy!

This looks amazing! I’m adding hemp seeds to mine when I make it. Kale definitely doesn’t get enough love. I like kale in salads because it’s a harder green that doesn’t easily wilt.
