Green Onion Turkey Burgers
Burgers and sandwiches, they are some of my favorite things! A big handful of juicy deliciousness, oh yeahhh! And don’t get me wrong – I LOVE a beef burger, but these Green Onion Turkey Burgers were so juicy and so incredible, for a minute there I was like…beef who?! These were stuffed with green onions, garlic, Dijon, and spices! I whipped up a honey mustard mayo to smear all over the pretzel bun and then loaded the burgers up with a bunch of fresh veggies! This was just mind blowing! I’m salivating just writing about it! These burgers had me digging in the fridge for that last quarter of a burger in the middle of the night! I just could not get enough of the flavor!

So, what’s the deal with turkey burgers anyway!? Why does everyone have such “beef?”
Turkey burgers get a lot of shade because, naturally, we do compare them to beef burgers. We don’t mean to, we just do! Another reason is they are often times associated with diet culture and so people sometimes judge them based solely on that. These poor little burgers have stigma. I mean, that’s honestly wild. A burger with stigma?!
Due to the lower fat content in turkey, they can also dry out quickly. That’s why the most important thing (and this goes for any burger) is to flip only one time! This preserves those juices in the patty! Also, seasoning really matters! The right seasonings and ratios of them can make anything taste phenomenal!
The bottom line – turkey burgers deserve to be appreciated for what they are! They are their own burger category! And if done right – they can be extremely flavorful!

People assume turkey burgers are “what you have when you can’t have what you really want,” which is totally unfair because they can be absolutely delicious. With all of that being said, they are really healthy. They’re like a dietician’s dream, actually! They’re low-fat and packed with B vitamins and protein!
And green onions are equally nutritious! They have a ton of Vitamin K, Vitamin A, antioxidants, and there’s virtually no calories in them! Pretty neat, huh?!
What do I need to make these green onion turkey burgers?
For the honey mustard mayo:
Green Onion
Mayo

Honey
Black Pepper
For the green onion turkey burgers:
Ground Turkey
Green Onion
Garlic
Breadcrumbs
Dijon
Worcestershire
Cold Water
Olive Oil
Salt
Garlic Powder
Onion Powder
Paprika
Black Pepper
For serving:
Pretzel Buns
Butter
Vine Tomatoes
Hydroponic Lettuce
Salt
Black Pepper
What equipment do I need?
- Cutting Board
- Chef Knife
- Measuring Cups and Spoons
- Grill Pan
- Spatula
- Silicone Brush
- Mixing Bowls
- Whisk
- Meat Thermometer
How do I make them?
To get started on this recipe, first we’ll want to make our honey mustard mayo, that way it can sit and chill in the fridge while we make the turkey burgers!
To make the honey mustard mayo:
Wash the green onions and mince them up, for this portion of the recipe, we only need the green parts. In a mixing bowl, add the onions along with all other ingredients for the sauce.

Whisk to combine. That’s it! Really easy! Cover it and refrigerate until ready to use.
Now let’s get started on the burgers!
To make the green onion turkey burgers:
Wash some more green onion and mince them up, the whole onion. Grate the garlic and add all burger ingredients besides a bit of the olive oil to a large bowl.

Use your hands to mix and combine, but don’t over mix! Form the mixture into 4 evenly sized burger patties.
A good rule of thumb is to make the patty pretty close to the same size buns you have! Mine ended up being about 1 inch thick.
Using your thumb, push a shallow indent into the middle of each patty.

Set aside until ready to cook! In the meantime, preheat the oven to 350 F to toast the buns.
Pro Tip: Using the cold water in the burger mix keeps the turkey juicy! And creating the little indent in the patties allows for more even cooking and stops the burger patties from puffing up!
To cook the green onion turkey burgers:
Heat the rest of the olive oil on a grill pan or a large skillet on medium high heat. Add the burgers and cook for a few minutes per side, flipping only once.

Once burgers are at an internal temperature of 165 F, remove to a plate and allow them to rest for a few minutes. While we wait, we can toast the buns!
To toast the pretzel buns:
Butter the top and bottoms of all of the buns, then toast them for a few minutes directly on the oven rack, butter side down.
To serve the green onion turkey burgers:
Wash your lettuce and tomatoes, then thinly slice the tomato.

Next, assemble the burgers as follows: smear the honey mustard mayo on the top and bottom of the buns. Add the turkey burger to the bottom bun, place two tomato slices on top, sprinkle some salt and pepper on the tomatoes, add the lettuce to the top bun and put the burger together!

Serve with your favorite sides! We had ours with some fries, but they’d also be good with kettle chips, tater tots, or a side salad! Try my air fried seasoned potatoes! Enjoy!
Tips:
- You can also grill these burgers following the same steps! It’s really cold outside by me right now and so in times like this, I like to turn to my grill pan!
- Use whatever bun you want, it doesn’t have to be pretzel! A brioche or sesame seed bun would be awesome too!
- If you don’t have green onion, you could totally get away with using chives or leeks! Yellow and red onion won’t give us the vibe we’re going for here!

For the honey mustard mayo:
- 2 tbsp Green Onion green part only, minced
- ⅓ cup Mayo
- 1 ½ tsp Dijon Mustard
- 1 ½ tsp Honey
- ¼ tsp Black Pepper
For the green onion turkey burgers:
- 1 lb Ground Turkey 85/15
- 3 Green Onions minced
- 1 Garlic Clove grated
- ½ cup Breadcrumbs
- 2 tbsp Cold Water
- 1 tbsp Worcestershire
- 2 tbsp Olive Oil divided
- 1 tsp Dijon Mustard
- 1 tsp Onion Powder
- 1 tsp Paprika
- ½ tsp Salt
- ½ tsp Garlic Powder
- ½ tsp Black Pepper
For serving:
- 4 Pretzel Buns
- 2 Vine Tomatoes thinly sliced
- 2 tbsp Butter softened, for the buns
- Hydroponic Lettuce
- Salt
- Black Pepper
Instructions
To make the honey mustard mayo:
- Add all honey mustard mayo ingredients to a mixing bowl and whisk to combine.
- Cover and refrigerate until ready to use.
To make the green onion turkey burgers:
