Grape Salad with Candied Walnuts

If you have kids, then you know they are totally obsessed with fruit! Like, if I let my kids…pretty sure they would just live off of fruit alone. I’m always trying to come up with new ways to showcase fruit in my kitchen and boy, this recipe blew us all away! This Grape Salad with Candied Walnuts had it going on! The combo of red and green grapes, the honey vanilla filling with that hint of lemon in there, the little mint bursts, the crunchy candied walnut pieces?! I mean it just hit every single texture and flavor. It was crunchy, creamy, sweet, kinda tangy, kinda herby! A total flavor bomb – exuding, cheesecake vibes?! This would drop jaws at a potluck this summer.

Where did the idea of grape salad come from, anyway?
The idea of grapes being mixed with sweet creamy ingredients and served together in a cohesive dish is an ancient idea. Like, ancient Rome! Grapes were mixed with honey and nuts, then served in a dessert. This of course was very popular back then, and today it has evolved into a variety of different recipes following that same flavor profile.
The grape salad we know and love today is a modern American invention! This potluck staple emerged around the mid-1900’s when seedless grapes became widely available and as more home cooks experimented with “sweet salads.” This is the same time cream cheese was invented, Jell-O salads started to pop off, and cool whip became a star! Grape salad was loved around the nation but specifically popular in the Midwest and the South! I love that – since I’m from the Midwest but planning to transplant to the South soon. I’m excited to experiment with more of these fusion ideas!

What ingredients do I need to make this?
For the salad:
Red Grapes
Green Grapes
Greek Yogurt
Cream Cheese
Sour Cream
Honey
Vanilla
Lemon Juice
For the topping:
Brown Sugar
Walnuts
Salt
For serving:
Mint
What equipment do I need?
- Mixing Bowls
- Juicer
- Measuring Cups and Spoons
- Beater
- Small Skillet
- Spatula
- Cutting Board
- Chef Knife
- Parchment Paper
- Paper Towel
How do I make it?
To prep the ingredients:
Take the cream cheese out of the fridge to soften, then chop the walnuts up, mince the mint, juice some lemon, and wash the grapes. Pat the grapes very dry and lay them out on some paper towel to dry completely.
To make the candied walnuts:
Next, let’s make the candied walnuts, that way they can cool completely while we prep the other ingredients. Add the walnuts to a small skillet with the rest of the ingredients for the topping. On medium heat, stir continuously until melted and crispy.

Remove from heat and spread the walnuts out on some parchment paper in a single layer to cool completely until ready to use.
To make the grape salad:
Add the softened cream cheese to a mixing bowl and beat until smooth. Add the Greek yogurt and sour cream, then beat until smooth. Stir in the vanilla, lemon juice, and honey. Fold in the grapes and carefully stir to combine.

Next, cover and refrigerate for a while to chill and marry the flavors together.
To serve:
Top the grape salad with candied walnuts and mint, then serve immediately. Enjoy!


Tips:
- I used a combo of red and green grapes in this salad, but you can totally get away with using one kind! It’s no big deal. It’ll still be really yummy!
- If you don’t have walnuts, you could always use pecans instead.
- Add whatever else you want to this! Apple would be really nice, raisins, whatever you want!
- This grape salad with candied walnuts will keep for 3-4 days if stored in an airtight container in the refrigerator. You can also make this up to a day ahead of time for a party or something like that. Just garnish with the fresh mint and candied walnuts just before serving.
