Cheddar Chicken Broccoli Bowtie

A creamy cheesy hug in a bowl! This cheddar chicken broccoli bowtie is comforting, delicious, and sure to please everybody at the dinner table. It’s super easy to whip up on a busy night and it leaves a bunch for leftovers! What’s not to love about that!? This is a new way to enjoy cheddar broccoli but instead of a soup, it’s pasta! It was delicious!

When did cheddar and broccoli become a duo?
The backstory behind this match made in heaven dates back to the 1990’s when Campbell’s Soup Company created a canned soup version that really popped off in America! The idea behind this soup was to actually mask the bitterness of broccoli with the rich, cheesy flavors! These flavors don’t just shine together in a soup though! The pair tastes amazing on a pizza, in a pasta, in a dip – I mean anything!

What ingredients do I need for this?
Chicken Breast
Yellow Onion
Garlic Cloves
Broccoli Florets
Shredded Cheddar
Chicken Broth
Bowtie Pasta
Cream Cheese
Olive Oil
Salt
Italian Seasoning
Black Pepper
Chili Powder
Optional garnishes:
Fresh Parsley
How do I make it?
Cook pasta to package instructions in some salty water. Drain and set aside. Next, in a large skillet heat oil on medium and cook onion until it starts to become translucent. Add garlic and cook till fragrant.
Add chicken, salt, pepper, Italian seasoning, chili powder, and stir well. Cook until chicken is browned and golden! Stir in broth, broccoli, and cream cheese. Turn heat to medium-low, bring to a simmer, cover and cook for several minutes, until broccoli is tender.
Stir in cooked pasta and cheddar cheese. Allow everything to incorporate together and melt before removing from heat and serving. Serve hot with fresh parsley, if desired!

- 1 ยฝ lbs chicken breast fat trimmed, cut into bite sized pieces
- 2 ยฝ cups broccoli florets
- 1 ยฝ cups shredded cheddar
- 1 cup chicken broth
- 8 oz bowtie pasta cooked to package instructions
- 3 garlic cloves minced
- ยฝ yellow onion diced
- 4 oz cream cheese softened, cut into cubes
- 2 tbsp olive oil
- 1 ยฝ tsp salt
- 1 tsp italian seasoning
- ยฝ tsp black pepper
- ยฝ tsp chili powder
Optional garnishes:
- parsley
Instructions
- In a large skillet heat oil on medium and cook onion until it starts to become translucent, about 2 minutes. Add garlic, cook till fragrant, about one minute
- Add chicken, salt, pepper, italian seasoning, chili powder, and stir well to brown the chicken, about 4-5 minutes.
- Stir in broth, broccoli, and cream cheese. Turn heat to medium-low, bring to a simmer, cover and cook 8-10 minutes until broccoli is tender.
- Stir in cooked pasta and cheddar cheese. Allow everything to incorporate together and melt before removing from heat and serving.
- Serve hot with fresh parsley, if desired!
