Beer Cheese

In the Midwest, we love our cheese! I whipped up this Beer Cheese for my family this weekend and it was amazing! We had it with some soft salty pretzels, but this dip could shine in so many other ways! You could put it on a charcuterie board, burger, or a sandwich! It was so simple to make, as only a few ingredients are needed! It felt super fitting since the NFL draft was just this past weekend! Total game day vibes!

Did you know?

Beer cheese actually originated in Kentucky! It was first served in the 1940’s at a local restaurant in Clark County, Kentucky! In 2013, the Kentucky Legislature officially declared Clark County as beer cheese’s birthplace! Crazy – as it totally seems like it is something that would’ve been born in the Midwest! This amazing, cheesy sauce is now loved all around the nation!

What do I need to make beer cheese?

Gruyere
Colby Jack
Cream Cheese
Beer
Dijon
Salt

Optional garnishes:

Green Onion
Shredded Cheese

How do I make it?

In a small saucepan, bring the beer to a simmer. Whisk in cream cheese, Dijon, and salt until melted and completely combined. Turn heat to low and slowly add in the cheese while whisking continuously.

Remove from heat and garnish with green onion and additional shredded cheese, if desired. Serve Beer Cheese with pretzels, chips, on a sandwich – any way you like! Enjoy!

Tips:

  • This will keep for 3-4 days in the refrigerator.
  • You can use whatever type of cheese you want! Just make sure to shred your own! It doesn’t matter what beer you use either! I used Budweiser!
  • To add a little depth of flavor, consider tossing in a touch of cayenne or ground mustard!

Ingredients
  

  • 1 ยฝ cups Gruyere freshly shredded
  • 1 ยฝ cups Colby Jack freshly shredded
  • 1 cup beer any kind, I used Budweiser
  • 4 oz cream cheese softened and cubed
  • 1 tbsp Dijon mustard
  • ยฝ tsp salt

Optional garnishes:

  • green onion thinly sliced
  • shredded cheese

Instructions
 

  • In a small saucepan on medium, bring the beer to a simmer.
  • Whisk in cream cheese, Dijon, and salt until melted and completely combined.
  • Turn heat to low, and slowly add in the cheese while whisking continuously.
  • Remove from heat and garnish with green onion and additional shredded cheese, if desired!
