Bacon Jalapeño Popper Dip

The holidays are coming, and you want YOUR dip to be the STAR of the show! This Bacon Jalapeño Popper Dip was cheesy, creamy, spicy, and crunchy! It was so easy to make, and it was SO satisfying! We had this dip with some crackers and pretzels, but it would be good with literally anything! Dunk some veggies in it, some ripped up bagels, or some garlic crostini! This is sure to warm your belly and have your family members asking when you’re going to make it again!

So, what is the backstory behind “The Jalapeño Popper?”

The Jalapeño Popper came about as kind of a Tex-Mex, American bar appetizer mash up! Back in Mexico in the 19th century, they would stuff poblano peppers with cheese and fry them to make Chile Relleno. Shortly after, people would use Jalapeño peppers because they were spicier and smaller.

By the 1950’s, Texans would start to stuff the jalapeños with meat and seafood as well! By the 1980’s, Texans were wrapping them in bacon and calling them “Armadillo Eggs.” At this time, these were very popular in the local newspapers – basically their version of “viral!” By 1992, the name “Jalapeño Popper” was trademarked by Anchor Food Products – and today the name and dish lives on, taking all types of twists and turns, like this ooey gooey dip!

What ingredients will I need?

Cream Cheese
Jalapeños
Bacon
Shredded Cheese
Mayo
Sour Cream
Green Onion
Salt
Garlic Powder
Onion Powder
Black Pepper

How do I make it?

To prep the ingredients:

The first thing you’ll want to do is take your cream cheese out of the fridge and let it soften at room temperature! Preheat oven to 350 F and grease a medium sized baking dish. While the cream cheese is softening, you can cook your bacon until crispy, then crumble it and set it aside until ready to use.

Thinly slice the green onion and dice the jalapeños.

To make the bacon jalapeño popper dip mixture:

Next, add all of the ingredients to a large mixing bowl, reserving some green onion, shredded cheese, and bacon for garnish. Stir to combine!

To bake it:

Fold mixture into the prepared baking dish and garnish with reserved cheese and bacon. Bake until golden and bubbly!

To serve:

Garnish with reserved green onion and serve this dip with crackers, pretzels, crostini – whatever you’re feeling! Enjoy!

Tips:

  • This wasn’t too spicy, so if you want it to be SPICY SPICY – consider adding another jalapeño or tossing some cayenne pepper into the mixture before you bake it!
  • You could mix this up a day ahead of time if you want! Just add it to the prepared baking dish, refrigerate, and bake just before going to a party! Cover with foil to keep warm or use a ceramic dish with a lid to keep the heat in. Alternatively, you could bake it, then transfer it to a small warmer and take it with you.
  • This dip would totally pop off cold too (no pun intended!) skip the baking step all together if you want!

Ingredients
  

  • 8 oz Cream Cheese softened
  • 4 Jalapeños deseeded and diced
  • ½ lb Bacon cooked and crumbled, divided
  • 2 cups Shredded Colby Jack Cheese divided
  • ¾ cup Green Onion thinly sliced, divided
  • cup Mayo
  • cup Sour Cream
  • 1 tsp Garlic Powder
  • ½ tsp Onion Powder
  • ¼ tsp Salt
  • ¼ tsp Black Pepper

Instructions
 

To prep:

  • Preheat oven to 350 ℉ and grease a medium sized baking dish.
  • You can cook your bacon until crispy, while the cream cheese is softening. Then crumble it and set it aside until ready to use.

To make the bacon jalapeño popper dip:

  • Add all the ingredients to a large mixing bowl, setting aside 1/4 cup bacon, 1/2 cup shredded cheese, and 1/4 cup green onion for garnish.
  • Stir to combine.
  • Fold mixture into the prepared baking dish and garnish with reserved cheese and bacon.
  • Bake until golden and bubbly, about 20 minutes.

To serve:

  • Garnish with the leftover green onion and serve this dip with crackers, pretzels, crostini – whatever you're feeling! Enjoy!
