Watermelon Mojito

This Watermelon Mojito was a total vibe! The flavors of watermelon, mint, lime – the crispness of the club soda and the sweet agave syrup? So good! These were really easy to make and it’s everything you want out of a summer drink. Of course, you gotta make it a little strong…otherwise what’s the point!? I loved dropping my watermelon garnish in there and then at the very end, you eat it and it’s like this big boozy crunch of watermelon! This recipe makes two drinks because of course; you need a poolside drinking buddy! These will totally crush as the temps warm! So refreshing!
Where did the mojito come from?
Mojitos originated in Cuba and date all the way back to the 16th century! They evolved from a drink called “El Draque,” named after English pirate Sir Francis Drake! Mojitos are loved because of their complex flavor profile! It’s a drink that offers it all, it’s sweet, sour, herbal! Mojitos are also much lower in calories than a lot of other similar cocktails! So, you should probably…have two?!

Watermelon got its name because it’s made up of 92% water! Way back in the day, early explorers would use watermelons as canteens because they held the water so well! Pretty neat, right?!
What do I need to make this?
For the watermelon mojito cocktails:
Mint
Watermelon
Lime
White Rum
Agave Syrup
Club Soda
Ice
For garnish:
Mint
Watermelon
How do I make it?
To build the watermelon mojito flavor:
First wash the mint, then wash and dry the lime. Juice and zest half of the lime. Cut your watermelon into cubes if you haven’t already and cut some into triangles for serving.

Next, muddle the mint leaves and watermelon chunks between two glasses, then fill each glass with ice.

Dump the lime zest and juice into each glass. Pour in the rum, agave syrup, and top with club soda.
To serve:
Serve each watermelon mojito with mint leaves and watermelon slices on top. Enjoy!

Tips:
- You could totally make a big batch of this for a party! If you do, I recommend drinking it that day or the mint will get a little soggy!
- If you don’t have club soda or agave syrup, just make a quick simple syrup by adding a cup of water and a cup of granulated sugar to a small saucepan and simmering over medium heat until the sugar dissolves! You could also skip the agave + club soda, or simple syrup – and just use sprite!

Watermelon Mojito
Ingredients
For the watermelon mojito cocktails:
- 12 watermelon cubes divided
- 12 mint leaves divided
- 6 oz white rum divided
- 2 tbsp agave syrup divided
- zest and juice from 1/2 a lime divided
- club soda
- ice
For garnish:
- watermelon cubes or triangles
- mint leaves
Instructions
To build the watermelon mojito flavor:
- Among two glasses, muddle 6 mint leaves and 6 watermelon chunks each.
- Fill each glass with ice.
- Dump in lime zest and juice, about 1/2 tsp of zest and 1/2 tbsp of juice per glass.
- Pour in 3 oz of rum per glass, then add 1 tbsp agave syrup to each.
- Top with club soda.
To serve:
- Serve watermelon mojitos with mint leaves and watermelon for garnish. Enjoy!
