Herb and Cheese Bread

This was my first time ever making my own bread and I gotta say – I see what all the hype is about with the current bread trend! It was so fun to make! I was sitting there just watching the yeast bubble up, like a science experiment! This Herb and Cheese Bread was savory and delicious! Of course, I’m a savory girl but you could always just make regular bread, or you could put a fun spin on this with some cinnamon or nutmeg for a sweet vibe! This was delicious served warm with butter or you could turn it into a delicious sandwich!

Savory breads are older than sweet breads! There was a time when it was difficult to get sugar, and so herby, cheesy, spicy breads dominated the homemade bread space! I won’t lie, I love that – since I’m a savory girl through and through! Sweet breads were later introduced and became increasingly popular in the 1800’s!

What ingredients do I need to make this?

Flour
Extra Sharp Cheddar Cheese
Active Yeast
Baking Powder
Salt
Thyme
Garlic Powder
Rosemary
Granulated Sugar
Basil
Black Pepper
Onion Powder
Chili Powder
Water

For serving:

Parsley
Parmesan

How do I make Herb and Cheese Bread?

To make the dough:

In a large bowl, whisk all ingredients besides yeast and cheese until combined. Next, in a small dish, empty entire yeast packet.

Get some pretty warm water (almost hot) and slowly pour it into the dish. Whisk to combine, then leave it alone for a while. You will see it bubble up and that’s when it’s ready, after several minutes. If it’s not bubbling, add a touch more HOT water, stir, and wait till it bubbles.

Add yeast and water mixture to the flour mixture and stir until you get a dough consistency. As the dough is starting to form, fold in the cheese. Wet your hands a little and use them to combine it better towards the end. It shouldn’t be sopping wet, but it should be moist and easy to work with.

Now we need to let our dough rise and prep it for baking!

Once you have a nice dough ball, leave it in the middle of the bowl and cover with a damp towel for a little while. Next, punch and knead your dough. Literally just beat it up! Cover again with a damp towel and let sit a bit longer.

After the bread has rose the second time – sprinkle some flour on a clean countertop, roll dough ball around a little, then pull down from the top-middle area and stretch the bread down on both sides towards the bottom-middle. Repeat 2-3 times.

Roll the dough around in the flour again and score 3 lines on the top of the bread. Left, middle, right. You can also make a cute design if you want!

Next, put some parchment paper into the bowl used for the dough and carefully lower ball back in, cover with a damp towel for the last time. Meanwhile, preheat oven to 450 F. Take out a Dutch oven and put it in the oven while it’s preheating.

It’s finally time to bake our herb and cheese bread!

Remove Dutch oven from the oven and spray with cooking spray. Remove dough ball from the bowl, carefully peel off the parchment paper and lower it into the preheated Dutch oven. You should hear a “TSSSSS” sound! That means it’s ready. Now bake it with the lid on!

Remove herb and cheese bread from the oven, remove the lid, and bake a few more minutes, until golden and crispy.

Remove from the oven and let cool for a few minutes before slicing.

To serve:

Garnish with freshly shredded parmesan, and minced parsley. Then slice and spread on some softened butter. This bread also makes a fantastic sandwich! Enjoy!

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 cup extra sharp cheddar cheese hand shredded
  • 0.25 oz packet Active Yeast
  • ½ tbsp baking powder
  • 1 tsp salt
  • 1 tsp fresh thyme minced
  • 1 tsp garlic powder
  • ½ tsp fresh rosemary minced
  • ½ tsp granulated sugar
  • ¼ tsp dried basil
  • ¼ tsp black pepper
  • ¼ tsp onion powder
  • ¼ tsp chili powder

For serving:

  • parsley minced
  • parmesan freshly shredded

Instructions

  • In a small dish, empty entire yeast packet. Get 3/4 cup of warm water (almost hot) and slowly pour it in.
  • Stir until mixed completely, then leave it alone.
  • You will see it bubble up and that's when it's ready – about 10-15 minutes later. If it's not bubbling, add about a tbsp of HOT water and stir, then leave it alone until it bubbles.
  • Add the yeast and water mixture to the flour mixture and stir until you get to a dough consistency. As the dough is starting to form, fold in the cheese.
  • Wet your hands a little and use them to finish mixing up the dough. It shouldn't be sopping wet, but it should be moist and easy to work with.

Now we need to let our dough rise and prep it for baking!

  • Once you have a nice cheesy dough ball, leave it there in the middle of the bowl and cover with a damp towel for 30 minutes.
  • After the 30 minutes, punch and knead your dough. Literally just beat it up! Cover again with a new damp towel and let it sit 30 minutes more.
  • After the bread has rose the second time – sprinkle some flour on a clean countertop, roll your dough ball around on it a little, then pull down from the top-middle and stretch the bread down on both sides towards the bottom-middle.
  • Repeat 2-3 times.
  • Roll the dough around in the flour a little more and score 3 lines on the top of the bread. Left, middle, right. You can also make a cute design or whatever you want! This allows our bread to breathe while baking!
  • Put some parchment paper into the bowl you used for the dough and carefully lower your ball back in, cover with a damp towel again for 30 final minutes.
  • Preheat oven to 450 ℉ and take out a Dutch oven. Put that in the oven while it's preheating.

Now we're finally ready to bake our Herb and Cheese Bread!

  • Take out Dutch oven and spray with cooking spray.
  • Remove dough ball from the bowl, carefully peel off the parchment paper and lower it into the preheated Dutch oven. You should hear a "TSSSSS" sound!
  • Bake with the lid on for 30-35 minutes.
  • Remove from oven, remove lid, and bake about 5 more minutes, until golden and crispy.
  • Garnish herb and cheese bread with freshly shredded parmesan and minced parsley.
  • Wait a few minutes, then slice and serve with some softened butter! This bread also makes a fantastic sandwich!

      1. It sure is! My recipes are all no-knead and slow rise. Also I always put the bread into the hot Dutch oven while it’s still on the parchment paper. That makes it easier to remove after baking too. Another difference is that my water for the yeast is never above 110° F (usually 105) Many different ways. This is the one that works for me every single time.
