Apple Cherry Muffins

Fall means apples, spices, chilly air, and good vibes! These Apple Cherry Muffins were fluffy, moist, crunchy, and spicy! They made the perfect breakfast and a really great snack! Served warm with some butter or chilled with some cold butter! These really hit the spot! The apple chunks and cherry chunks, the little bit of lemon in there – YUM! My whole family devoured these! And the best part about this recipe is that it makes a perfect baker’s dozen, ensuring plenty of treats throughout the week!

Cinnamon has been used for over 4,000 years – back in ancient Egypt it was used for medicine, perfume, and even embalming! And when apples are cooked, they release malic acids which enhances the spicy aroma from cinnamon! These flavors together get all the senses going! There have also been studies that show that cinnamon could potentially improve cognitive function and memory, especially when paired with fruits that are rich in antioxidants, like apples are!
Why use dehydrated cherry?
You can definitely use fresh cherries if you have them! Just make sure to pit them and chop them into bite sized pieces. If using fresh cherry, I would adjust the recipe to use only one apple and up the cherry to 1 cup to balance out the ratio of the fruits.
I had dehydrated cherry on hand and so that’s why I decided to use it! Like apples, cherries are full of antioxidants – even when dehydrated! Actually, dried cherries are rich in anthocyanins, which gives them their deep red hue and helps to fight inflammation in the body! Dried cherries are also good for your heart, with studies showing that they can reduce cholesterol and improve the functioning of blood vessels! They contain melatonin, which can help to balance sleep-wake cycles, and they also contain a decent amount of fiber!
This just goes to show that even fruit consumed in a dehydrated form can still be extremely nutritious! And honestly, one of my favorite things to do in the kitchen is see what I can make with what I already have! I feel like it really boosts my creativity!
What ingredients do I need to make apple cherry muffins?
Apple
Dehydrated Cherries
Flour
Granulated Sugar
Milk
Egg
Butter
Vegetable Oil
Lemon Juice
Vanilla
Baking Soda
Baking Powder
Cinnamon
Salt
Cooking Spray
What equipment do I need?
- Muffin Pan
- Mixing Bowl
- Whisk
- Measuring Cups and Spoons
- Small Dish
- Cooling Rack
- Paring Knife
- Cutting Board
How do I make them?
To prep:
Preheat the oven to 375 F and wash the apples. Peel and chop them into bite sized pieces and set aside until ready to use. Don’t worry about them getting brown, once they are baked, they’ll be totally fine.
To make the batter:
Next, in a large mixing bowl, add all dry ingredients and whisk until combined. Then add the wet ingredients, besides the milk, fruit, and butter.

Whisk to combine. In a small dish melt butter, then stir it into the muffin mixture with the milk. Keep stirring until a smooth batter is formed – but don’t overmix it!
Fold in the apples and cherry, reserving some for a topping, if desired.

To bake and serve the apple cherry muffins:
Pour muffin batter into a greased muffin pan, filling the cups about 3/4 way full, then top with reserved apple and cherry. This recipe will make a baker’s dozen!

Bake the muffins and remove from the oven once golden brown and springy to the touch! Allow to cool for several minutes before removing from the pan and moving to a cooling rack to cool completely – or enjoy these warm with some butter!

Tips for these apple cherry muffins:
- These muffins will keep for 2 days if stored in an airtight container at room temperature! They can also be refrigerated for up to a week or frozen for up to 3 months!
- You can use whatever type of apple you want in this recipe! I like McIntosh because they’re the perfect amount of sweet and tart!
- I love using this muffin pan because it has the fill lines on it for you, which is pretty slick! The baby blue color is so dang cute, and the coating is incredible – the muffins just slid right out of there! You can definitely use muffin liners or a silicone liner for the pan if you want to, but it’s really not needed AT ALL!

- ¾ cup Milk
- ½ cup Dehydrated Cherries
- ½ cup Vegetable Oil
- 2 tbsp Salted Butter melted
- 1 ½ tsp Cinnamon
- 1 tsp Lemon Juice
- 1 tsp Vanilla
- 1 tsp Baking Powder
- ¼ tsp Baking Soda
- ¼ tsp Salt
- Cooking Spray
Instructions
- Preheat the oven to 375 ℉
To make the batter:
- In a large mixing bowl, add all dry ingredients and whisk until combined.
- Next, add in all wet ingredients, besides the milk, fruit, and butter and whisk until combined.
- In a small dish melt butter, then stir it into the muffin mixture with the milk.
- Keep stirring until you get a nice smooth batter – but don't overmix it!
- Fold in the apples and cherry, reserving some for a topping if, desired.
To bake the apple cherry muffins:
- Pour muffin batter into a greased muffin pan, filling the cups about 3/4 way full.
- Top with reserved apple and cherry – and bake 20-25 minutes. The muffins are done once golden brown and springy to the touch!
- Wait 5 minutes before removing from the pan.
To serve:
- Move to a cooling rack to cool completely or serve warm with butter! Enjoy!
