Orange Cranberry Bread

I’m not big on sweets but I do love me a good bread, muffin, anything that features a fruit! This Orange Cranberry Bread was so moist and delicious! The flavor that the orange and zest bring, it’s amazing! Then you have those plump cranberries! I’m such a sucker for cranberry! I wish it was featured more besides just in the Fall! That’s why I decided to make this bread; I’m missing some cranberry in my life! My family loved it bread served warm with some melted butter for breakfast. Yum!

Cranberries bounce when they’re ripe! If you toss one at the ground and it thuds, then it’s a dud! They are actually nicknamed “bounceberries!” Pretty fun!
What do I need to make Orange Cranberry Bread?
Flour
Frozen Cranberries
Granulated Sugar
Salted Butter
Egg
Oranges
Milk
Vanilla
Baking Powder
Baking Soda
Cooking Spray
How do I make it?
Preheat oven to 350 F and lightly grease an 9×5 loaf pan. In a medium sized bowl, beat sugar, egg, and butter until creamed. In a large sized bowl, whisk flour, baking soda, and baking powder until combined. Finally, in a small sized bowl, whisk orange zest, juice, and milk until combined.
Stir the orange and milk mixture into the creamed sugar, then dump into the large bowl with the flour. Beat the mixture until a batter forms. Gently fold in the frozen cranberries and scoop into prepared loaf pan. Bake!
Orange Cranberry Bread is done when an inserted center toothpick comes out with just a few wet bits on it and appears golden brown in color. Let bread cool for several minutes before moving to cooling rack.
Slice and serve warm with some butter on it! It’s also amazing at room temp and even cold with some cold butter on it! Enjoy!

Tips:
- This bread will keep for 2 days if stored in an airtight container on the counter. Beyond that, it can be refrigerated for up to a week. It can also be frozen for up to 3 months!
- If you don’t have fresh orange, you could always use bottled orange juice. The zest really adds a lot of flavor though, so if you can get fresh – do it!
- You can use fresh cranberry instead of frozen in this recipe if you have it!

- 1 ¾ cups frozen cranberries not thawed
- 1 cup granulated sugar
- 5 tbsp salted butter softened
- 1 tbsp milk
- 1 tsp vanilla
- 1 tsp baking powder
- ¾ tsp baking soda
- cooking spray
Instructions
- Preheat oven to 350 ℉ and lightly grease an 9×5 loaf pan.
- In a medium bowl, beat sugar, egg, and butter until creamed.
- In a large bowl, whisk flour, baking soda, and baking powder until combined.
- Finally, in a small bowl, whisk orange zest, juice, and milk until combined.
- Stir the orange and milk mixture into the creamed sugar, then dump into the large bowl with the flour.
- Beat the mixture a batter forms.
- Gently fold in the frozen cranberries and scoop into prepared loaf pan. Bake an hour.
- Bread is done when an inserted center toothpick comes out with just a few wet bits on it and bread is golden brown in color.
- Allow bread to cool for 10 minutes before moving to cooling rack.
- Slice and serve Orange Cranberry Bread warm with butter on it! Enjoy!
