Strawberry Salad

Summer makes me want to eat all the salads and all the berries! I’m usually into a savory salad but this Strawberry Salad has some sweet AND savory notes! You get the sweetness from the strawberry, the toasty nuttiness from the almond, the tangy salty flavors from the feta – it’s a complete flavor pop! We had this with my homemade Lemon Poppy Seed Dressing, and it was incredible! This salad could be done up so many ways, and it would be delicious every time!

Did you know?

Strawberries are the only fruits with seeds on the outside! Isn’t that neat!? And they’re technically not even “true” berries since the seeds aren’t on the inside! These little fruits are so good for you though, and they’re extremely versatile!

What ingredients do I need to make this?

Romaine Lettuce
Spinach
Strawberries
Red Onion
Almonds
Feta
Salt
Black Pepper
Lemon Poppy Seed Dressing, store-bought or try my recipe!

How do I make it?

Add all ingredients besides almonds and dressing to a large bowl. In a small skillet on medium heat, toast the almonds, stirring frequently so they don’t burn. I used whole almonds and carefully sliced them in half with a very sharp knife. I wanted to have more texture and substance to them but if you don’t feel like doing this, you can just purchase them slivered.

Add almonds and Lemon Poppy Seed Dressing to the salad and toss until combined. Enjoy!

Can I substitute other ingredients in this Strawberry Salad?

Absolutely! You could sub out the almonds for pecan or walnut! Add chicken or use a balsamic vinaigrette or glaze. You could do grapes instead of strawberries! Some blackberries or raspberries would be really good in this too!

If you don’t like feta, you could use some chopped colby jack or sharp white cheddar! The opportunities are endless! Mainly, it’s all about getting that perfect balance between sweet and savory!

Ingredients
  

  • 6 cups romaine lettuce chopped
  • 2 cups spinach
  • 1 ยฝ cups strawberries sliced
  • 1 cup red onion sliced
  • ยฝ cup almonds cut in half or buy them slivered
  • 4 oz feta cheese
  • ยฝ tsp salt
  • ยผ tsp black pepper
  • Lemon Poppy Seed Dressing store-bought or try my recipe!

  1. Years ago in my home town there was a restaurant that made a strawberry salad that I loved. I could never duplicate it but this recipe is as close to it as I have come! Thank you for sharing!
