Beefy Vegetable Soup

It’s already cold AF by me and I’m totally dreading it. I swear, everyone who lives in the Midwest talks about loving the fall, “but not what comes after!” And all of the reasons we stay is for…family! UGH! So, as I sat in my sweatpants, curled up in a blanket – really the only thing I could think about is a cozy, comforting soup! This Beefy Vegetable Soup was a total soul warmer! It was so colorful and flavorful! The kids loved it, my hubby loved it, and this recipe made a bunch! It’s a freezer friendly soup that truly never gets old! It’s incredibly easy to make and perfect for those days that you just wanna stay curled up on the couch!

When did families start making varieties of beefy vegetable soup?
This soup is loved by most and has been around for a very long time! Soups combining beef and vegetables became a staple for families in the mid-20th century and really started to pop off between 1930 through 1970! Soups became a staple during The Great Depression and WWII because they were a nutritious and affordable way to provide comfort and stretch meals. And in the 1950’s, Campbell’s Soup Company heavily marketed this type of soup as a kid-friendly, wholesome supper when they introduced their canned version!
This soup is so hearty and nostalgic, really giving that home-cooked feel! It’s a great way to use up garden veggies, leftover meat, and pantry staples. It’s also super convenient to make! I have so much fun making soups! Just toss everything into this big pot and watch it come to life! Oh, and the amazing aroma!? I mean, it’s a total vibe!

What ingredients do I need to make this?
For the beefy vegetable soup:
Ground Beef
Onion
Garlic
Carrots
Potatoes
Celery
Frozen Peas
Frozen Corn
Diced Tomato
Tomato Sauce
Beef Broth
Olive Oil
Salt
Black Pepper
Onion Powder
Garlic Powder
Cayenne
Italian Seasoning
Bay Leaf
For serving:
Parsley
Parmesan
What equipment do I need?
How do I make it?
To prep the ingredients:
To get started on this soup we’ll first want to wash and prep all of our veggies! Thinly slice the celery, dice the onion, mince the garlic. Scrub the potatoes really well and cut them into bite-sized pieces. Peel the carrots and slice those into 1-inch coins. Take the corn and peas out of the freezer to start thawing.

To make the beefy vegetable soup:
Next, in a large stockpot brown the ground beef on medium heat, breaking it up with a spoon as it cooks. Cook until no longer pink, drain, and move to a plate covered with foil to keep warm until ready to use.
In the same skillet, heat oil on medium and sauté the onion, garlic, celery, and carrots for a few minutes, stirring occasionally. Season with some of the salt to help draw out some moisture.

When the veggies feel like they’re starting to get tender, add in the broth, tomatoes, tomato sauce, bay leaf, green beans, potatoes, and the rest of the seasonings. Turn heat to high and bring to a boil, then turn to medium, cover and simmer for a while, stirring occasionally.

When veggies are tender and potatoes can easily be pierced with a fork, add the beef back into the pot along with the thawed peas and corn. Cook on medium-low for a few minutes to warm everything through.

To serve:
Remove from heat, remove the bay leaf, and serve hot! Garnish Beefy Vegetable Soup with parmesan, parsley, and crispy bread! Enjoy!

Tips:
- This beefy vegetable soup will keep for 3-5 days if stored in an airtight container in the refrigerator. It can also be frozen for up to 3 months!
- Add some shells or elbow macaroni to this if you want to! Just keep in mind, pasta is NOT freezer friendly.
- Add a touch more cayenne if you want this to have some more kick or consider using some crushed red pepper flakes for an immediate spice on the tongue!

Beefy Vegetable Soup
Ingredients
For the beefy vegetable soup:
- 1 lb Ground Beef
- 8 cups Beef Broth
- 3 Potatoes scrubbed and cut into bite-sized pieces
- 3 Celery Stalks thinly sliced
- 3 Garlic Cloves minced
- 2 Medium Carrots peeled and thinly sliced
- 1 Yellow Onion diced
- 1 – 13 oz Can Diced Tomato
- 8 oz Can Tomato Sauce
- ½ cup Frozen Peas thawed
- ½ cup Frozen Corn thawed
- 2 tbsp Olive Oil
- 1 tbsp Italian Seasoning
- 2 tsp Salt divided
- 1 tsp Garlic Powder
- ½ tsp Black Pepper
- ½ tsp Onion Powder
- ¼ tsp Cayenne
- 1 Bay Leaf
For serving:
- Parsley
- Parmesan
Instructions
To make the beefy vegetable soup:
