Raspberry Honey Lemon Daiquiri
Christmas is over and I wish winter would be too! I’m so over the snow already! I’m dreaming of Valentine’s Day, I’m dreaming of Spring! This Raspberry Honey Lemon Daiquiri was like a little kiss of fruity sunshine! It was chilled and shaken, it was lemony, sweet, tart, balanced, and BOOZY! This would be perfect to make for your lovebug on V-Day, shake some up for your girls for a bridal shower, have this as a springy cocktail for an Easter brunch! Make it for your mom for Mother’s Day! Whatever you want! All I know is this is all I want to be drinking come V-Day. While I eagerly await the return of Love Island USA…and dream of a tropical vacation! This was so yummy and there’s some really cool techniques in this recipe! No special tools required!

So, what makes a drink a daiquiri?
A classic daiquiri only requires 3 simple ingredients – rum, citrus juice, and sweetener! Which means there’s a lot of routes you can go here. There are about 10 different types of categories of rum out there, but most of us are familiar with white/light/silver, dark, overproof, spiced, and aged!
As for the citrus, this could be lemon, lime, orange, even grapefruit! The sweetener leaves lots of room for creativity as well! You could use simple syrup, honey, agave or maple syrup, or you could use a fruit purée, like I did here!
Finally, a daiquiri can be made by blending frozen fruit or using ice, to give that beachy, frozen vibe! Or it can be shaken with ice and poured into a chilly glass! So, as you can see – daiquiris are one of the most flexible cocktails out there – which makes the mixology super fun!

And while most of us go a little bit wild for this holiday, Valentine’s Day looks different all around the world! In some countries like Estonia and Finland, friendship is the main focus, rather than romance!
A lot of people think that Valentine’s Day became a thing because of a total massacre blood bath! And while there was a massacre on this holiday, it took place centuries after the holiday was already established and it was completely unrelated to Valentine’s Day! It was actually caused by gang members during Prohibition!
Even if crushing over V-Day isn’t really your vibe, I think anybody can appreciate a springy cocktail! I know I’m eagerly anticipating the melting of these snowbanks, the sunshine, tulips, and I mean – I think I’ll even take rain at this point! Anything but…winter. Blah!
What ingredients do I need to make this daiquiri?
To make the raspberry purée:
Raspberries
Water
For the honey water:
Honey
Water
For the raspberry honey lemon daiquiri:
Lemon
White Rum
Ice
For garnish:
Granulated Sugar
Raspberries
Basil
What equipment do I need?
- Bullet or Blender
- Measuring Cups and Spoons
- Juicer
- Chef Knife
- Cutting Board
- Vegetable Peeler
- Cocktail Shaker or Mason Jar + Funnel
- Tall Glasses or Specialty Glasses
- Mixing Bowls
- Fine Mesh Sieve
- Wooden Spoon
- Whisk
How do I make it?
To get started on this recipe, first wash all of your fruit and your herbs. Next, we’ll want to make the raspberry purée and get that chilling! It’s simple!
To make the raspberry purée:
Just add the raspberries to the blender with a little bit of water and blend until smooth.

Get out a mixing bowl and strain the purée through a fine mesh sieve into the bowl. Use a wooden spoon to push the raspberry purée through, catching those seeds and discarding them. Cover bowl and refrigerate until ready to use!

To make the honey water:
Now, let’s make the honey water. Add honey to some warm water, whisk to combine or just use a fork, cover and refrigerate until ready to use!

To make the lemon twist:
Next, take your washed lemon and dry it off with some paper towel. This helps to cut a cleaner strip of zest, and it also allows the oils to be expressed since water will act as a barrier! Cut the lemon in half.
Use a vegetable peeler to carve off some of the lemon’s skin, excluding that white “pith” part since it’ll just make things taste bitter. This method we will be doing is called “expressing the lemon.” You’ll peel off about a 2-inch strip of zest, and since my recipe makes 2 cocktails (one for your boo too😉) you’ll want to do this twice!

Get out your glasses. Now take the zest strips and twist them, as if you were wrapping it around a pencil, and sort of “spray” them into each glass. Rub the lemon twists on the rims of the glasses and set aside until ready to use again! This is releasing that zest and essential oil from the lemon, which, even though you can’t really see it – it adds MEGA flavor!
To coat the rims:
Next, rub the juicy part of the lemon around the rims of the glasses. Shake some granulated sugar out onto a cutting board or in a shallow dish and shimmy the rims of the glasses in it, to coat the rims.

To make the daiquiris:
Juice the lemon into a bowl and set aside until ready to use.
Get out your chilled raspberry purée, chilled honey lemon water, and rum. I don’t have a cocktail shaker, so I use a mason jar/funnel combo, and it works just fine! If you have a cocktail shaker, great!
Fill the mason jar or shaker up about halfway with ice then dump in all of your ingredients! The purée, lemon juice, honey water, and rum!

Put the lid on the jar or shaker and shake vigorously! Pour between the two glasses. I used the funnel to help me pour with my mason jar!
Garnish each raspberry honey lemon daiquiri with the lemon twists, a basil leaf, and two skewered raspberries! Enjoy!


Tips:
- Any white, light, or silver rum will work just fine for this recipe!
- The tartness from the raspberry is very nice and compliments the flavors in this drink really well, but you could always use strawberries too! It would still be really yummy!
- To make this drink for multiple people, just make everything in a pitcher, stir the ice up with a wooden spoon, and if you’re brave (I would totally do this!) just carefully pour through the funnel, into another pitcher! Now you have like 6 of these made and ready to go! What a hack!

Equipment

Ingredients
To make the raspberry purée:
- ⅓ cup Raspberries
- 1 tbsp Water
For the honey water:
- 2 tbsp Honey
- 2 tbsp Warm Water
For the raspberry honey lemon daiquiri:
- 1 Lemon
- 4 oz White Rum
- Ice for shaking
For serving:
- 4 Raspberries
- 2 Basil Leaves
- Granulated Sugar for the rim
Instructions
To make the raspberry purée:
- Add the raspberries to the blender or bullet with 1 tbsp of water and blend until smooth.
- Get out a mixing bowl and strain the purée through a fine mesh sieve and into the bowl. Use a wooden spoon to push the raspberry purée through, catch those seeds and discard.
- Cover bowl and refrigerate until ready to use!
To make the honey water:
- In a small bowl, whisk warm water and honey until honey has dissolved.
- Cover and refrigerate until ready to use!
