With more and more sunny days in our future, it’s time to start stacking my drink lineup to beat the heat! My husband and I love sippin’ on fruity cocktails while we hang on the deck or grill some steaks. It just seems like a whole vibe to us. This Dragon Fruit Rum Cooler was so unique and went down incredibly easy! The orange and lime in there complemented that sweet agave syrup and those subtle notes of dragon fruit and rum! It felt like the type of drink you’d be having poolside or on some tropical getaway. It was so easy to make it, and as always, this recipe makes two drinks. Ya need a drinking buddy!

How does dragon fruit work in this cocktail recipe?

If you’ve ever had dragon fruit before, then you know that while it appears to be like THE COOLEST FRUIT EVER, it’s actually quite mild in flavor. Still, there is this gentle sweetness about it, and because the outside of the fruit is so beautiful, naturally, the inside is too! Those little seeds in there make for a pretty photogenic drink! The agave syrup helps to showcase the dragon fruit’s sweetness, while the citrus flavors bring this nice punch!

Dragon fruits are so wild! They grow on a cactus called a Hylocereus cactus, aka the “Honolulu queen,” and the flowers only bloom at night. After dark, these huge fragrant flowers open up and showcase their beauty for all the night owls to enjoy. Pretty neat, huh? The name “dragon” comes from that distinct outer skin it has, since it gives total mythical dragon vibes!

Agave syrup is just as cool! This tasty goo comes from a desert succulent. And even though agave plants look like a cactus, this succulent is related to the lily family. These interesting plants have to mature for 6-8 years before you can even harvest it to make the syrup, otherwise it won’t be very sweet at all. It’s sweeter than sugar, which means you can use it in smaller amounts and it’s vegan! I think that’s super cool!

What ingredients do I need to make this?

For the dragon fruit rum cooler:

Dragon Fruit
White Rum
Lime
Orange
Agave Syrup
Salt
Ice

For serving:

Mint
Dragon Fruit

How do I make it?

To prep the dragon fruit:

The first thing we’ll want to do is wash the dragon fruit. Cut the ends off of it, then cut it into quarters, reserving two thin slices for garnish. Pull the peeling back and the fruit will come right out.

Dice it up, then add it to a mason jar or cocktail shaker. I don’t have a cocktail shaker, so I used the mason jar method, and it worked great! Using a masher or muddler, mash up the dragon fruit until juicy and mushy.

To make the dragon fruit rum cooler:

Wash the orange and limes, then juice them into a small bowl.

Next, add the citrus juices, rum, agave syrup, and salt to the mason jar or cocktail shaker. Fill it up about halfway with ice, then shake for several seconds.

Fill two glasses up with ice and strain the mixture between them.

Pro Tip: I used a fine mesh sieve and strained it into a bowl since I don’t have a cocktail shaker. Then I used a wooden spoon to push down and get all of that flavorful liquid out. Is using a cocktail shaker quicker? Sure is. But this just goes to show you don’t need any special tools to make a fancy cocktail at home!

To serve:

Serve dragon fruit rum cooler cocktails garnished with fresh mint leaves and a dragon fruit wheel on each glass. Enjoy!

Tips:

  • If you don’t have agave syrup you could use honey or maple syrup instead.
  • White rum, silver rum, light rum – they’re all the same and they’ll all work in this recipe.
  • To make a whole bunch of these, just double or triple the recipe and make everything in a giant bowl or pitcher!

  • ยผ cup Orange Juice freshly squeezed from 1 orange
  • 3 tbsp Lime Juice from 1.5 limes
