Easy Sweet and Spicy Chicken Ramen
I love making Asian food at home. I think it’s so fun, and once you have the ingredients on hand – the world is your oyster! It’s usually done very quick, which is perfect for when you’re busy and your family is STARVIN!’ I mean, a 30-minute dinner? It really can’t get much better than that. This Easy Sweet and Spicy Chicken Ramen was bursting with fresh veggies, juicy chicken, sweet and spicy broth, and silky noodles. The soft-boiled egg on the top was a total chef’s kiss. This is the type of meal that leaves your belly and brain in pure bliss. The warmth carries through your core!

So, what is ramen and where does it come from?
Ramen is a Japanese noodle soup that typically features wheat noodles, seasoned broth, and a ton of toppings like pork, green onions, corn, bamboo shoots, soft boiled eggs, and chili oil.
In the late 1800’s, Chinese immigrants brought wheat noodles to Japan, where Japanese cooks adapted them and starting added meat, broth, and toppings – eventually calling it ramen. How neat! By 1910, ramen shops were opening up all over Tokyo.
That’s when ramen became a star!

Today, ramen is still extremely popular all around the world, with Americans slurping down over 4 billion servings every year! That’s largely thanks to convenience and the copious amount of options for Asian takeout and fast-casual noodle shops within the U.S. We really love it! Ramen is actually one of the top 5 most-ordered dishes too.
What ingredients do I need to make it?
For the broth:
Olive Oil
Sesame Oil
Serrano Peppers
Garlic
Ground Ginger
Chicken Broth
Coconut Milk
Soy Sauce
Agave Syrup
Gochujang
Fish Sauce
Tarragon
Salt
Freshly Cracked Black Pepper
Red Pepper Flakes
Lime

What equipment do I need?
- Measuring Cups and Spoons
- Cutting Board
- Chef Knife
- Stockpot
- Spatula
- Soup Ladle
- Unflavored Dental Floss – to slice the eggs
- Saucepan
- Disposable Rubber Gloves
- Zester
- Juicer
How do I make it?
To prep the ingredients:
To get started on this recipe, first we’ll want to prep all of our ingredients.
Wash and dry all of your veggies and herbs, then mince the garlic. Zest and juice the lime. Thinly slice the green onion, chop up the peanuts, then chop up or shred the cooked chicken. You can use rotisserie chicken or check out my recipe for oven baked chicken breasts.
Lastly, deseed and dice the serrano peppers.

Pro Tip: You should definitely use disposable rubber gloves. Serranos are HOT.
To make the broth:
In a stockpot over medium, heat the olive and sesame oil until shimmering. Sauté the serrano peppers for a few minutes, stirring occasionally, until tender.
Next, add the garlic and ginger, and cook until fragrant.
Add the rest of the broth ingredients besides the lime zest and juice and once simmering, reduce heat to medium low.

Simmer gently for several minutes, stirring occasionally. While that’s simmering, let’s soft boil the eggs.
To soft boil the eggs:
In a medium saucepan, bring some water to a boil. Soft boil the eggs for a few minutes, then drain and add to a bowl with cold water.
Carefully peel and set aside.
To make the sweet and spicy chicken ramen:
Once broth is creamy and slightly thickened, stir in the ramen noodles, discarding their seasoning packs.
Reduce heat to low, cooking 2 minutes more, and stirring the noodles occasionally to separate. Next, stir in the chicken and cook for a few minutes, to warm.

Add the arugula, stirring, and once wilted, removing from heat.
Stir in the lime zest and juice.

To serve:
Serve this easy sweet and spicy chicken ramen with fresh cilantro, green onion, chopped peanuts, sesame seeds, and red pepper flakes garnished on top.
Add a lime wedge, some freshly cracked black pepper, and a drizzle of sesame oil for finishing.
Lastly, carefully grab your soft-boiled egg and using some dental floss or fishing line, wrap it around the egg lengthwise, as if you’re going to tie a bow. Pull it tight and taught – slicing it over the prepared bowls of ramen.
Pro Tip: Yes, it really works. This is like THE way too because these eggs are so delicate!
Lay cut side up on top of the bowls and serve immediately. Break that egg and the yolk into the ramen and it becomes part of the silky sauce. YUM. Enjoy!


Tips:
- This has some spice, but due to the creamy coconut – it’s still family friendly. If you are wanting it to be pretty mild, consider using just one serrano pepper.
- If you are wanting to make this for meal prep, just store all of the toppings separate, then build the bowls as you go. I would also recommend making the soft-boiled eggs as you want to eat them.
- This easy ramen will keep for 3-4 days if stored in an airtight container in the refrigerator. It is not freezer friendly!
- Adding the lime zest and juice at the very end prevents the creamy broth from breaking while keeping the flavor fresh and bright!

Ingredients
For the broth:
- 1 tbsp Olive Oil
- ½ tsp Sesame Oil
- 2 Serrano Peppers deseeded and diced
- 5 Garlic Cloves minced
- 1 tsp Ground Ginger
- 2 cups Chicken Broth
- 1 – 13.5 oz Can Coconut Milk
- 2 tbsp Soy Sauce
- 1 tbsp Agave Syrup
- 2 tsp Gochujang
- 1 tsp Fish Sauce
- ½ tsp Tarragon
- ¼ tsp Salt
- ¼ tsp Freshly Cracked Black Pepper
- ¼ tsp Red Pepper Flakes
- Zest and Juice from One Lime about 2 tsp zest and 2 tbsp juice
For the easy sweet and spicy chicken ramen:
- 2 Eggs
- 2 Ramen Noodle Packs spice packets discarded
- 1 cup Arugula packed
- 2 cups Cooked Chicken try my recipe or use rotisserie!
For serving:
- 2 tbsp Cilantro minced
- 1 Green Onion thinly sliced
- 2 tbsp Peanuts chopped
- Sesame Seeds
- Red Pepper Flakes
- Lime Wedges

Instructions
