Cheesy Chicken Burrito

We’re big burrito lovers in our house! They’re the best! Easy, portable, delicious! This Cheesy Chicken Burrito was spicy, cheesy, and so flavorful! The flavors from the raw onion and cilantro in there, really make this burrito pop! Then that squirt of lime on there as you’re eating it, it’s a total flavor punch! We whipped these burritos up with some cooked chicken we had on hand which made a wonderful quick dinner for the family!

Where did burritos come from and why are they so great?
The origin of the burrito is sort of a mystery! The first burrito was likely created in the early 20th century in Mexico around the time of the Mexican Revolution. Vendors would wrap meat, beans, and other ingredients in large tortillas and call them burritos – which means “little donkey” in Spanish! The name was likely given because the vendors would sell the burritos out of donkey carts Pretty neat!
Burritos are great because they are simple to make, portable, and filled with hearty ingredients to keep you full and fueled! They’re also freezer friendly, which makes them a great grab-and-go meal!

The largest burrito ever made was over 2 miles long! It was created in Mexico and weighed more than 2 tons! That tortilla would be about the length of 35 football fields!
What ingredients do I need to make this Cheesy Chicken Burrito?
For the cilantro lime rice:
White Rice
Cilantro
Salt
Lime
Black Pepper
For the burritos:
Cooked Chicken – rotisserie or see my recipe
Shredded Cheese
Hot Sauce
Tomato
Onion
Garlic
Cilantro
For serving:
Tortillas
Lime
Shredded Cheese
Cilantro
How do I make it?
To make the cilantro lime rice and the cheesy chicken burritos:
Cook rice to package instructions, fluff with fork, then stir in all cilantro lime rice ingredients and set aside until ready to use. Next, in a medium bowl, mix all chicken burrito ingredients together until combined. Lay tortillas out on a plate and scoop some of the rice and chicken mixture into the center. Wrap it up like a burrito.
To toast:
In a large skillet on medium heat, toast burritos starting with the seam side down. Toast for about a minute per side, until golden brown. You can do 2-3 burritos at a time, maybe even all 4 depending on your pan size. I can fit 3 in mine with room to flip! Sprinkle cheese over the burritos, cover skillet, and remove from heat.
To serve:
When cheese has melted, serve Cheesy Chicken Burrito with additional cilantro garnish and lime wedges, if desired! Enjoy!

Cheesy Chicken Burrito
Ingredients
For the cilantro lime rice:
- 2 cups white rice
- 2 tbsp cilantro minced
- 1 tsp salt
- 1 tsp lime juice
- ยผ tsp black pepper
For the cheesy chicken burrito:
- 4 large sized burrito tortillas
- 1 ยฝ cups cooked chicken – rotisserie or see my recipe
- ยพ cup shredded Mexican cheese blend
- 2 garlic cloves minced
- 1 Roma tomato deseeded and diced
- ยฝ a yellow onion diced
- ยผ cup Frank's Hot Sauce
- 2 tbsp cilantro minced
For serving:
- lime wedges
- shredded cheese
- cilantro minced
Instructions
To make the cilantro lime rice:
