For me, there’s nothing like an egg oozing yolk all over a bed of hashbrowns and tender veggies! A true morning dream! This Bacon Breakfast Skillet was smoky, cheesy, yolky – it was everything I want in a breakfast! I love making different variations of breakfast skillets! I could never get tired of them. This one was a huge hit with the fam, and it was incredibly easy to make! This is packed with protein, and it takes no time at all! The perfect Saturday morning start!

“The breakfast skillet” – aka a warm and flavorful breakfast loaded with egg, potatoes, meat, and veggies, actually evolved from cowboy campfire cooking in the American West! Ranch hands would toss whatever they had on hand into a cast iron skillet and cook it over an open flame! The hope was that this hearty breakfast would keep workers fueled for a long day’s work!

What do I need to make this Bacon Breakfast Skillet?

Bacon
Eggs
Frozen Hashbrowns
Onion
Green Pepper
Shredded Cheddar Cheese
Garlic
Butter
Salt
Black Pepper
Cooking Spray

Optional garnishes:

Cilantro
Hot Sauce

How do I make it?

In a large skillet, cook bacon until crispy! Remove and set aside until ready to use. Add hashbrowns to grease, cover, and cook on medium heat for 5 minutes. Add butter, salt, pepper, onion, green pepper, and garlic, stir everything until combined, patting down flat with your spatula. Cover and cook for 2 minutes more. Uncover, sprinkle crumbled bacon over everything, stir and make 4 wells for the eggs. Spray everything really well with cooking spray and crack eggs into the wells. Sprinkle the eggs with a touch of salt and pepper, turn heat to medium-low, cover, and cook 3 minutes. Eggs are done when the whites have set and no longer jiggle.

Remove from heat, top with cheese, cover until cheese has melted. Garnish Bacon Breakfast Skillet with cilantro and hot sauce, if desired! Enjoy!

Ingredients
  

  • 5 slices bacon cooked and crumbled
  • 4 eggs
  • 2 ยฝ cups frozen hashbrowns
  • 2 garlic cloves minced
  • 1 yellow onion diced
  • ยฝ cup green pepper diced
  • ยฝ cup shredded cheddar cheese
  • 1 tbsp butter
  • ยฝ tsp salt
  • ยผ tsp black pepper
  • Cooking spray
