Burritos are one of our fav things to have! They can be loaded with whatever you want! They’re portable! And when they’re cold, you can call it a wrap! These Southwest Burritos gave a Chipotle meets Qdoba vibe! The rice, the black beans, the ground beef, corn, green pepper, jalapeño, tomato – I mean there was a TON of flavor going on in this! The fresh lime and cilantro really pull it all together! And the best part about this recipe is that there is a TON of leftovers! You can do anything with them! Make more burritos, nachos, make a Crunchwrap at home – whatever you want! That’s the beauty of dishes like this with a bunch of Mexican inspired ingredients; the opportunity is endless!

Where do Southwest flavors come from?

When I think of Southwest – I think of meats, cheeses, rice, black beans, burritos, bowls, tacos, and nachos! I think of Qdoba, Chipotle, Moe’s. So where do these flavors come from? Southwest cuisine is a broader term for Americanized Mexican food originating in the Southwestern parts of the United States! Similarly, Tex-Mex is Americanized Mexican food that originated in Texas! Super interesting, right?!

So, while Southwest is an umbrella term that includes Tex-Mex, it also includes food from other states like New Mexico, Arizona, and parts of California. Southwest cuisine is usually very colorful, spicy, and features a mix of American, Mexican, and Spanish influence!

What ingredients do I need to make this?

For the filling:

Ground Beef
Corn
Tomato
Green Pepper
Jalapeño
Black Beans
Onion
Garlic
Olive Oil
Salt
Black Pepper
Cayenne
Cumin
Chili Powder

For the cilantro lime rice:

White Rice
Lime
Cilantro
Salt
Black Pepper

For the southwest burritos:

Tortillas
Cilantro
Lime
Guacamole – store-bought or try mine!
Sour Cream
Shredded Cheddar

What equipment do I need?

How do I make these Southwest Burritos?

To make the filling:

In a large skillet on medium heat, brown beef and drain. Set aside and cover with foil until ready to use. Next, in the same skillet on medium, heat oil and cook onion, pepper, corn and jalapeño for a few minutes, stirring occasionally.

Add the garlic and cook until fragrant, then add the rest of the seasonings for the filling, the tomatoes, and black beans. Stir to combine.

Turn heat to medium-low and add beef back into the skillet. Simmer for a few minutes, stirring occasionally.

While that’s cooking, let’s get our rice ready!

To make the cilantro lime rice:

Cook rice to package instructions and stir in all cilantro lime rice ingredients.

To make the southwest burritos:

Remove skillet with the filling from heat, stir in the cilantro lime rice, and the rest of the lime juice and cilantro.

Assemble the burritos with the filling, a dollop of sour cream, and guacamole. Sprinkle some cheddar on and add another squirt of lime juice, if desired.

Wrap them up and toast on medium heat for a few minutes per side, starting seam side down.

Remove from heat when burritos are toasty brown on both sides and serve with additional guacamole, sour cream, lime, and cilantro! Enjoy!

What to do with all the leftovers?

Since this recipe yields a whole bunch, you will have leftover burrito filling for days! How to keep the Southwest flavors fresh and exciting? Repurpose the ingredients in a nacho, make some burrito bowls, make some fried tacos! There’s lots of opportunity here!

Ingredients
  

For the filling:

  • 1 lb Ground Beef
  • 1 Yellow Onion diced
  • 1 Green Pepper diced
  • 2 Garlic Cloves minced
  • 1 – 15 oz Can Black Beans drained and rinsed
  • 1 – 14.5 oz Can Diced Tomatoes
  • 1 cup Frozen Corn thawed
  • ¼ cup Jalapeños deseeded and diced
  • 1 tbsp Olive Oil
  • 1 ¾ tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Cumin
  • ¼ tsp Cayenne
  • ¼ tsp Chili Powder

For the cilantro lime rice:

  • 2 cups White Rice
  • 1 tbsp Cilantro minced
  • 1 tbsp Lime Juice freshly squeezed
  • 1 tsp Salt
  • ¼ tsp Black Pepper

For the southwest burritos:

  • 8 Large Burrito Tortillas
  • 1 cup Shredded Cheddar
  • 3 tbsp Cilantro minced
  • 1 tbsp Lime Juice freshly squeezed
  • Sour Cream
  • Guacamole – store-bought or try mine!

Instructions
 

To make the filling:

  • In a large skillet on medium heat, brown beef, breaking the meat up as it cooks. Cook until no longer pink, about 5-7 minutes.
  • Drain, set aside and cover with foil until ready to use.
  • In the same skillet on medium, heat oil and cook onion, green pepper, corn and jalapeño for 2-3 minutes, stirring occasionally.
  • Add the garlic and cook until fragrant.
  • Add the rest of the seasonings for the filling, the diced tomatoes, and black beans. Stir to combine.
  • Turn heat to medium-low and add beef back into the skillet.
  • Simmer for 3 minutes, stirring occasionally. While that's cooking, let's get our rice ready!

To make the cilantro lime rice:

  • Cook rice to package instructions.
  • Add the rest of the cilantro lime rice ingredients and stir to combine.

To make the southwest burritos:

  • Remove skillet with the filling from heat, stir in the cilantro lime rice and the rest of the lime juice and cilantro.
  • Assemble the burritos with the filling, a dollop of sour cream, and guacamole. Sprinkle some cheddar on and add another squirt of lime juice, if desired.
  • Wrap them up and toast on medium heat for 2-3 minutes per side, starting seam side down.
  • Remove from heat when burritos are toasty brown on both sides and serve with additional guacamole, sour cream, lime, and cilantro! Enjoy!

    Yum! I love all the flavors in these southwest burritos! Perfect the mix keeps for 3-5 days in an airtight container in the refrigerator (if it can last that long at my house!)
