Southwest Burritos

Burritos are one of our fav things to have! They can be loaded with whatever you want! They’re portable! And when they’re cold, you can call it a wrap! These Southwest Burritos gave a Chipotle meets Qdoba vibe! The rice, the black beans, the ground beef, corn, green pepper, jalapeño, tomato – I mean there was a TON of flavor going on in this! The fresh lime and cilantro really pull it all together! And the best part about this recipe is that there is a TON of leftovers! You can do anything with them! Make more burritos, nachos, make a Crunchwrap at home – whatever you want! That’s the beauty of dishes like this with a bunch of Mexican inspired ingredients; the opportunity is endless!

Where do Southwest flavors come from?
When I think of Southwest – I think of meats, cheeses, rice, black beans, burritos, bowls, tacos, and nachos! I think of Qdoba, Chipotle, Moe’s. So where do these flavors come from? Southwest cuisine is a broader term for Americanized Mexican food originating in the Southwestern parts of the United States! Similarly, Tex-Mex is Americanized Mexican food that originated in Texas! Super interesting, right?! So, while Southwest is an umbrella term that includes Tex-Mex, it also includes food from other states like New Mexico, Arizona, and parts of California. Southwest cuisine is usually very colorful, spicy, and features a mix of American, Mexican, and Spanish influence!
What ingredients do I need to make this?
Ground Beef
Tortillas
Rice
Corn
Tomato
Green Pepper
Jalapeño
Black Beans
Onion
Garlic
Cheddar
Cilantro
Lime
Olive Oil
Sour Cream
Guacamole – store-bought or try mine!
Salt
Black Pepper
Cayenne
Cumin
Chili Powder
What equipment do I need?
How do I make these Southwest Burritos?
In a large skillet on medium heat, brown beef and drain. Set aside and cover with foil until ready to use. In the same skillet on medium, heat oil and cook onion, pepper, corn and jalapeño for a few minutes, stirring occasionally. Stir in some of the salt and pepper. Add garlic and cook for another minute. Add the rest of the seasonings, tomatoes, and black beans. Then stir to combine.

Turn heat to medium-low and add beef back into the skillet. Simmer for a few minutes, stirring occasionally. While that’s cooking, let’s get our rice ready! Cook rice to package instructions and stir in some cilantro, the rest of the salt and pepper, and some lime juice.


Remove skillet from heat and pour in the rice mixture, the rest of the lime juice, and the rest of the cilantro. Stir until combined.


Assemble the burritos with the filling, a dollop of sour cream, and guacamole. Sprinkle some cheddar on and add another squirt of lime juice, if desired.

Wrap them up and toast on medium heat for a few minutes per side, starting seam side down. Remove from heat when burritos are toasty brown on both sides and serve with additional guacamole, sour cream, lime, and cilantro! Enjoy!

Southwest Burritos
Ingredients
- 1 lb Ground Beef
- 8 Large Burrito Tortillas
- 2 cups Rice cooked to package instructions
- 1 Yellow Onion diced
- 1 Green Pepper diced
- 2 Garlic Cloves minced
- 1 – 15 oz Can Black Beans drained and rinsed
- 1 – 14.5 oz Can Diced Tomatoes
- 1 cup Frozen Corn thawed
- 1 cup Shredded Cheddar
- ¼ cup Jalapeños diced
- ¼ cup Cilantro minced, divided
- 2 tbsp Fresh Lime Juice divided + more for serving
- 1 tbsp Olive Oil
- 2 ¾ tsp Salt divided
- ¾ tsp Black Pepper divided
- ½ tsp Cumin
- ¼ tsp Cayenne
- ¼ tsp Chili Powder
- Sour Cream
- Guacamole – store-bought or try mine!
Instructions
- In a large skillet on medium heat, brown beef, breaking the meat up as it cooks. Cook until no longer pink, about 5-7 minutes. Drain, set aside and cover with foil until ready to use.
- In the same skillet on medium, heat oil and cook onion, green pepper, corn and jalapeño for 2-3 minutes stirring occasionally.
- Stir in 1 3/4 tsp salt, 1/2 tsp black pepper, and garlic. Cook for another minute. Add the rest of the seasonings besides remaining salt and pepper. Stir in diced tomatoes and black beans.
- Turn heat to medium-low and add beef back into the skillet. Simmer for 3 minutes, stirring occasionally. While that's cooking, let's get our rice ready!
- Cook rice to package instructions and stir in 1 tbsp cilantro, 1 tbsp lime juice and the rest of the salt and pepper.
- Remove skillet from heat and pour in the rice mixture, the rest of the lime juice, and the rest of the cilantro. Stir until combined.
- Assemble the burritos with the filling, a dollop of sour cream, and guacamole. Sprinkle some cheddar on and add another squirt of lime juice, if desired.
- Wrap them up and toast on medium heat for 2-3 minutes per side, starting seam side down.
- Remove from heat when burritos are toasty brown on both sides and serve with additional guacamole, sour cream, lime, and cilantro! Enjoy!
Notes
- Instead of sprinkling the cheese on each individual burrito, you can just stir it all into the mix just before wrapping the burritos up.
- This recipe makes a ton! Repurpose the leftovers in a nacho, burrito bowl, or fried tacos later on in the week! This burrito mix will keep for 3-5 days if stored in an airtight container in the refrigerator.
