You know that moment. It’s the weekend and you’re wanting breakfast, but you don’t want the same old same old. Maybe you’re having friends over for brunch on a holiday and you want to make something really impressive, but nothing too difficult! This Biscuits and Gravy Breakfast Pizza was like brunch on steroids! It was crunchy, fluffy, cheesy, creamy, a little spicy – I mean it really had it all! This was simple to whip up and completely wowed my family! We could not stop talking about how good this pizza was!

When was the idea for breakfast pizza first invented?

The very first widely known breakfast pizza appeared in the late 1980’s and one of the earliest creators was Papa’s Aldo Pizza in Iowa! People had been eating pizza in the morning for centuries, but those versions did not feature sausage, bacon, eggs and other things like that until around this time. And while there isn’t one single inventor, it seems that this really popped off as some sort of hybrid creation, specifically in the Midwest! By the 1990’s and 2000’s breakfast pizza was being served in schools, diners, and chains all across the region!

Biscuits and gravy became popular thanks to southern cuisine back in the 19th century! Ingredients like milk, flour, and drippings were inexpensive and a creative way to create a hearty breakfast! It started with just meat drippings but then when milk and flour were added it became known as “sawmill gravy,” with sausage becoming an addition later on.

Biscuits and gravy even has TWO of its own holidays, December 2nd and February 21st, where foodies celebrate “National Biscuits and Gravy Day!” Pretty neat stuff.

What ingredients do I need to make Biscuits and Gravy Breakfast Pizza?

For the white gravy:

Butter
Flour
Half and Half
Salt
Black Pepper
Garlic Powder
Chili Powder

For the scrambled eggs:

Eggs
Half and Half
Butter
Salt
Black Pepper
Dried Oregano

For the biscuits and gravy breakfast pizza:

Jumbo Butter Biscuits
Ground Breakfast Sausage
Garlic
Shredded Mozzarella
Shredded Cheddar
Garlic Powder

For serving:

Green Onion

What equipment do I need to make this?

How do I make it?

The first thing you’ll want to do is make the white gravy, that’s going to be the pizza sauce!

To make the white gravy:

In a large skillet on medium heat, melt butter. Whisk in the flour and cook for a minute or so, stirring constantly until bubbly. Once the roux is formed, slowly pour in the half and half, whisking constantly. Next, turn heat to medium-low, keep whisking, and add the seasonings in.

Continue whisking and simmering until sauce thickens and becomes like a gravy consistency. Remove from heat and set aside until ready to use.

To prep the pizza:

Preheat oven to 375F and lightly grease a pizza pan or stone. Then mince up your garlic and thinly slice the green onion. Next, in a large skillet on medium heat, brown the breakfast sausage. Breaking it up with a spatula as it cooks, cook until no longer pink. Move to a paper towel lined plate until ready to use and set the skillet aside for later.

Next, add the biscuits to the pizza pan or stone in a circle, overlapping them slightly. Use your hands to push the biscuit dough together, sort of kneading and pushing the dough until it all becomes one crust-like circle. You want it to have a biscuity vibe so I wouldn’t recommend using a rolling pin here, we want the texture! Sprinkle with some garlic powder and use a fork to poke a few scattered holes in it.

Now par-bake the dough for a few minutes, until it starts to set. While that’s baking, let’s work on our scrambled eggs!

To make the scrambled eggs:

In a mixing bowl whisk the eggs along with the half and half and spices.

Next, use a paper towel to slightly wipe out the skillet we made the sausage in and melt butter on medium-low heat. Scramble the eggs for a few minutes, until fluffy, but don’t cook them all the way! Remove from heat and set aside until ready to use.

To make the biscuits and gravy breakfast pizza:

On the par-baked dough, spread a generous amount of gravy on the pizza, using the back of a spoon to make it even. Be sure to leave an outer rim for the crust! You’ll have a little bit of gravy leftover.

Next, sprinkle the garlic all around.

Add half of each cheese, the sausage, egg, and the rest of the cheese on top of everything.

Bake until crust is golden and the cheese is melty. Garnish breakfast pizza with thinly sliced green onion and enjoy!

Tips:

  • Leftover pizza and leftover gravy will keep for 3-5 days if stored in an airtight container in the refrigerator.
  • You don’t have to use biscuit dough for this pizza, though it’s recommended! Regular pizza dough will work just fine!
  • If you don’t have breakfast sausage, you could always substitute some cooked and crumbled bacon!

Ingredients

For serving:

  • 1 Green Onion thinly sliced

  1. Our park hosts a southern biscuits and gravy brekky every Saturday morning. Although it’s delish and we love it, hubs and I take part only a couple of times each season. This take is fun and interesting!
