It’s been really hot here, which is honestly shocking for Wisconsin this time of year! I’m trying to cool down and lounge in the sun for as long as possible! This Frozen Pineapple Creamsicle Colada was refreshing, boozy, and super tropical! It was so easy to make this, and you can either make a few or make a whole bunch. It’s the perfect drink to beat the heat, relax a little, and get your tan on. This really gave creamsicle vibes. I felt like I was somewhere on a beach while drinking this!

Where did the piña colada originate from?

The OG piña colada came from San Juan, Puerto Rico in 1954! A bartender by the name of Ramón whipped up a non-alcoholic version for the very first time while he was working at the Caribe Hilton Hotel. Later on, rum was added into this drink and today, it’s the island’s official national drink!

The creamy center in a creamsicle was actually one of the earliest versions of food engineering in the American frozen treat world! Back when these treats were invented in the 1930’s, freezers were inconsistent, so the center of the popsicle was made with air incorporation and stabilizers which helped to keep it soft.

The original flavor combo was orange + vanilla which is also a staple scent used in mood boosting aromatherapy! The thought process was that this scent combo creates feelings of nostalgia, reminding consumers of this favorite childhood classic! Isn’t that awesome? Scents definitely have the power to transport us in our mind!

To prep the ingredients:

To get started on this recipe, first you’ll want to cut your pineapple into chunks. Next, wash and juice some of your lemon, then cut the rest into wedges.

To make the frozen pineapple creamsicle colada:

Add the pineapple chunks, ice, rum, agave syrup, half and half, and fresh lemon juice to a large blender.

Blend until smooth, then pour the mixture between two glasses.

To serve:

Top frozen pineapple creamsicle coladas with whipped cream, a maraschino cherry, a lemon wedge, and a skewer of pineapple chunks, if desired. Serve immediately and enjoy!

Tips:

  • If you feel like the mixture is too thin, add more ice. If you feel that it’s too thick, add more lemon juice.
  • This recipe will make two drinks. If you need a whole bunch of this for a party, consider doubling or tripling the recipe. You can always store the extra mix in the freezer, right in the blender if you want.
  • Any light rum will work for this! You could even use Malibu if that’s what you have on hand. Though it’s not a true rum, it’ll still work and be really yummy!
  • If you don’t have agave syrup on hand, just whip up a quick simple syrup by mixing 1 cup water + 1 cup granulated sugar and simmering it in a saucepan until it dissolves.

  • 2 cups Ice
  • 1 cup Fresh Pineapple cut into chunks
  • 4 oz White Rum
  • 2 tbsp Agave Syrup
  • 1 tbsp Half and Half
  • 1 tbsp Lemon Juice freshly squeezed

For serving:

  • Whipped Cream
  • Maraschino Cherries
