Fried Pulled Pork Tacos

I’m always looking for new and fun ways to use up leftovers! I had a ton of leftover pulled pork from the Carnitas recipe that I had made. Though, you could make these Fried Pulled Pork Tacos with really any type of leftover meat! The best part is it takes no time at all to make these! These tacos were so juicy and flavorful! They made a really delicious late-night snack, totally gave us food truck vibes!

These are a great way to use up pulled pork!
I feel like everyone’s been there…you have a whole bunch of leftover pulled pork and you’re totally sick of having sandwiches or tacos. This recipe revives your feelings about pulled pork tacos because it’s basically like consuming them in a whole new way! A fresh taco brings vibrancy and freshness, where a fried taco is a comforting guilty pleasure!
What ingredients do I need to make these?
Corn Tortillas
Leftover Pulled Pork
Shredded Cheddar
Olive Oil
Yellow Onion
What do I serve them with?
Salsa
Sour Cream
Cilantro
Lime
Queso
How do I make them?
Heat olive oil in a skillet on medium. Lay tortillas out and add a bit of pulled pork and shredded cheddar on top, fold over and cook for about 2 minutes. Flip and cook until golden brown on both sides. Repeat until all tacos are fried, adding oil as needed.
Serve with side of salsa and lime wedges, if desired. Garnish with cilantro and onion. Enjoy!
Tips:
If you don’t eat them all and want to reheat later, just pop them in the air fryer at 360 F for 2-3 minutes! Alternatively, you can refry them quickly or just pop them in the microwave!

Fried Pulled Pork Tacos
Ingredients
- 5 yellow corn tortillas
- 2 cups leftover pulled pork
- ยฝ cup shredded cheddar
- 2 tbsp yellow onion diced
- 2 tbsp olive oil divided
For serving:
- cilantro
- salsa
- lime
- queso
Instructions
- Heat 1 tbsp olive oil in a skillet on medium. Lay tortillas out and add a bit of pulled pork and shredded cheddar on top, fold over and cook for about 2 minutes.
- Flip and cook until golden brown on both sides. Repeat until all tacos are fried, adding oil as needed
