Tomato and Feta Scrambled Eggs

You know those mornings where you have no idea what to make for breakfast? You don’t want to default to the same old same old, so you think, let’s try something new? That was totally me as I conjured up this recipe with my toddler in tow! And it turned out amazing! These Tomato and Feta Scrambled Eggs were light, yet creamy, garlicky, cheesy – I mean they just hit every note!

How do feta and eggs go well together?

Feta is tangy and salty, while eggs are rich and fluffy! These two go perfect together and give a Mediterranean breakfast vibe! The mozzarella, tomato, and herbs bring in even more creaminess and add a fresh finish to this yummy dish!

What ingredients do I need to make this?

Eggs
Garlic Cloves
Shredded Mozzarella
Half and Half
Feta
Butter
Diced Tomato
Salt
Italian Seasoning
Black Pepper

Optional garnishes:

Parsley

How do I make it?

In a small bowl crack egg, pour in half and half, and whisk mixture until combined well. In a large skillet on medium low, melt butter and add garlic to pan. Cook until fragrant, about one minute, then pour in egg mixture. Add spices to eggs and when eggs are just about set, after about 3 minutes, stir in tomato and feta.

Remove eggs from heat and garnish with mozzarella cheese and parsley. Serve Tomato and Feta Scrambled Eggs on buttered toast or by itself! Enjoy!

Tips:

  • If you’re not a fan of feta, you can swap out any other type of cheese! Sharp cheddar would be a great alternative
  • Stir in any other veggies you want during the cooking process! Mushrooms, peppers, whatever you like!
